Mango Cake, Sloppy Joes And Mango Kulfi by Zarnak Sidhwa

Ingredients For Mango Cake:

  • Mangoes mashed  2 1/2 cups
  • Caster sugar 2 cup
  • Eggs  2
  • Flour  2 cup
  • Baking soda  2 tsp
  • Walnuts chopped  1 cup
  • Vanilla essence  1 tsp
  • Cream cheese  4  ounces
  • Butter, softened  1/4 cup
  • Sifted icing sugar  2 1/4 cups
  • Vanilla essence  1 tsp

Method:

  1. Mix mangoes, caster sugar and eggs, add in the flour, baking soda walnuts and 1 tsp vanilla, stir to combine.
  2. Pour batter into a greased and floured 13x9 inch baking pan.
  3. Bake at180 degrees C for  35-40 minutes or until skewer comes out clean, let cool.
  4. In another mixing bowl, combine cream cheese, butter icing sugar and essence, stir to mix well.
  5. Spread over the cake.
  6. Cut into squares and serve.

Ingredients For Sloppy Joes:

  • Mince  1/2 kg
  • Onions  2 medium
  • Ketchup  1 cup
  • Worcestershire sauce 2 tbsp
  • Brown sugar  1 tbsp
  • Mustard  1 tsp
  • Vinegar  1 tbsp
  • Chili powder  1 tbsp
  • Oil  2 tbsp
  • Small buns  as required

Method:

  1. Heat oil, add onions and add mince and saute until it is no longer pink, drain.
  2. Stir in the ketchup, worcestershire sauce, brown sugar, mustard, vinegar and chili powder.
  3. Bring to a boil.
  4. Reduce heat, simmer uncovered.
  5. Spoon 2-3 tbsp onto each bun.
  6. Serve immediately.

Ingredients For Mango Kulfi:

  • Condensed milk  1 can
  • Mango puree  14 oz
  • Thick cream  280 gm

Method:

  1. Blend the mangoes and the puree should measure 14 oz.
  2. Add in the blender the condensed milk and cream and mix well and pour in boxes or kulfi moulds and freeze overnight till set.
  3. Take out and serve with mango cubes.
