Rainbow Rice Pudding, Red Fried Chicken And Shimla Pulao by Chef Zakir

Ingredients For Shimla Pulao:

  • Rice  1/2 kg
  • Onions  2
  • Capsicum  3 to 4
  • Green chilies  4 to 5
  • Clarified butter  1/2 cup
  • Garlic  4 to 5 cloves
  • Fennel seeds  1 tbsp
  • Coriander seeds  1 tbsp
  • Cumin seeds  1 tbsp
  • Cotton  a piece
  • Salt to taste

Method:

  1. First add water with water.
  2. After that our ghee, garlic cook it.
  3. When the garlic turns to golden then add onions, green chilies, cumin, capsicum and keep it temperature on low temperature.
  4. Now take a muslin cloth add fennel, bunch of coriander, add this bag and pour water.
  5. When water boils then add rice with some salt.
  6. Then simmer it after watching the water quantity for 8 to 10 minutes.
  7. Delicious Shimla pulao is ready.

Ingredients For Red Fried Chicken:

  • Chicken breast  2
  • Tomato paste  3 tbsp
  • Coriander leaves 1/4 bunch
  • Lemon (juice) 2
  • Egg  1
  • Corn flour 2 tbsp
  • Flour  2 tbsp
  • Bread crumbs 1 cup
  • Papaya paste  2 tbsp
  • Crushed red pepper  1 tbsp
  • Salt  to taste
  • Oil  for fry

Method:

  1. First chicken breast in stir piece.
  2. Now add tomato paste, chopped coriander, lemon juice, salt, chopped red chilies, papaya paste mix it well.
  3. Then add corn flour, flour, egg mix it.
  4. Now put bread crumbs in a plate.
  5. Then coat the chicken pieces in bread crumbs fry it in hot oil.
  6. When it turns to golden color then take it out and serve it with sauce.

Ingredients For Rainbow Rice Pudding:

  • Water 1-1/2 glass
  • Rice 1/2 kg
  • Sugar 250 gm
  • Almond chopped 250 gm
  • Pistachio 250 gm
  • Khoya  250 gm
  • Red jelly  1 packet
  • Green jelly 1 packet
  • Kewra water  2 tbsp
  • Almond ground 50 gm

Method:

  1. First keep the rice in water, boil it.
  2. When the rice is cooked well, turns soft, put them into chopped, now divide them into 3 pieces.
  3. Then put first piece in a pan and turn on the stove.
  4. After that add water, add red jelly cook it well.
  5. When it is cooked well then take it out in a serving dish.
  6. Now cook it by adding green jelly.
  7. Now spread the white rice on 3rd piece.
  8. Sprinkle some khoya and chopped almonds, pistachio when it turns to cool then leave it.
  9. When it turns to cool then take it out and serve.
