Naam Toup, Massaman Curry And Rice Noodles With Chicken & Dark Soya Sauce by Chef Gulzar

Ingredients For Naam Toup:

  • Beef pasanday 1/2 kg
  • Papaya paste 1/2 cup
  • Rice  2-3 tbsp
  • Whole red chili  3-4
  • Fish sauce  2-3 tbsp
  • Soya sauce  5 tbsp
  • Green onion  1/2 cup
  • Green coriander  1/2 bunch
  • Mint leaves  1/2 bunch
  • Chinese salt  1 tsp
  • Lemon juice  3-4 tbsp
  • Salad leaves  2-3
  • Tomatoes  1-2
  • Cucumber  1
  • Oil  2-3 tbsp
  • Salt  to taste

Method:

  1. Take a mixing bowl add pasanday, salt, soya sauce, papaya paste, marinate it for 3 to 4 hours.
  2. Now fry the marinated beef in hot oil.
  3. Now give heat to the coal and put the pasanday in pan with a coal for simmering it.
  4. Now take a mixing bowl, add whole red chilies, fish sauce, chopped green coriander, chopped mint, chopped and roasted rice, green onion, Chinese salt, and lemon juice mix it well.
  5. Then add beef Julian slices mix it.
  6. Now take out salad in platter, cucumber, tomato, salad leaves for garnishing then serve.

Ingredients For Massaman Curry:

  • Beef mince 1 kg
  • Garlic  8-10
  • Onion  2
  • Potato  2-3
  • Small cardamom  3-4
  • Cloves  2-3
  • Cinnamon  2-3 sticks
  • Cumin seeds  1 tsp
  • Red chili  8-10
  • Curry paste  2 tbsp
  • Fish sauce  2 tbsp
  • Lemon grass  1-2
  • Tamarind paste  2 tbsp
  • Coconut milk  1 cup
  • Brown sugar 1 tbsp
  • Roasted peanuts 1/2 cup
  • Green coriander 1/2 cup
  • Oil  2-3 tbsp
  • Salt to taste

Method:

  1. First add small cardamom, cloves, cinnamon, whole cumin fry it well.
  2. Now add red chilies, masala chop it with mince, mix it in chopper.
  3. Pour oil in a pan, add garlic cloves, onions for frying.
  4. Now add mince masala then fry it.
  5. Then add poppy seeds, potato, coconut milk, curry or curry paste powder and salt for frying.
  6. Now add brown sugar, tamarind paste, peanuts mix it well.
  7. Then add lemon grass, and take it out in a dish
  8. Then add green coriander for garnishing then serve.

Ingredients For Rice Noodles With Chicken & Dark Soya Sauce:

  • Boiled rice noodles 1/2 packets
  • Chicken boneless  1/2 kg
  • Green beans 100 gm
  • Garlic 5-6
  • Green chilies 3-4
  • Oyster sauce 2 tbsp
  • Soya sauce  1 tbsp
  • Dark soya sauce 1 tbsp
  • Red chili flakes 1 tbsp
  • Egg  1
  • Brown sugar 1 tbsp
  • Oil  2-3 tbsp
  • Salt to taste

Method:

For making Rice Noodles:

  1. Pour water in a pan add rice noodles.
  2. When it turns to soft then filter it and set it into serving platter.
  3. Now pour oil in a pan, add garlic cloves for frying.
  4. Then add chicken for frying.
  5. Now add green beans, chopped red chilies, egg, salt , oyster sauce, soya sauce, fry it.
  6. Now add brown sugar, and add noodles mix it then dish out and serve.
