Ingredients For Naam Toup:
Beef pasanday 1/2 kg
Papaya paste 1/2 cup
Rice 2-3 tbsp
Whole red chili 3-4
Fish sauce 2-3 tbsp
Soya sauce 5 tbsp
Green onion 1/2 cup
Green coriander 1/2 bunch
Mint leaves 1/2 bunch
Chinese salt 1 tsp
Lemon juice 3-4 tbsp
Salad leaves 2-3
Tomatoes 1-2
Cucumber 1
Oil 2-3 tbsp
Salt to taste
Method:
Take a mixing bowl add pasanday, salt, soya sauce, papaya paste, marinate it for 3 to 4 hours.
Now fry the marinated beef in hot oil.
Now give heat to the coal and put the pasanday in pan with a coal for simmering it.
Now take a mixing bowl, add whole red chilies, fish sauce, chopped green coriander, chopped mint, chopped and roasted rice, green onion, Chinese salt, and lemon juice mix it well.
Then add beef Julian slices mix it.
Now take out salad in platter, cucumber, tomato, salad leaves for garnishing then serve.
Ingredients For Massaman Curry:
Beef mince 1 kg
Garlic 8-10
Onion 2
Potato 2-3
Small cardamom 3-4
Cloves 2-3
Cinnamon 2-3 sticks
Cumin seeds 1 tsp
Red chili 8-10
Curry paste 2 tbsp
Fish sauce 2 tbsp
Lemon grass 1-2
Tamarind paste 2 tbsp
Coconut milk 1 cup
Brown sugar 1 tbsp
Roasted peanuts 1/2 cup
Green coriander 1/2 cup
Oil 2-3 tbsp
Salt to taste
Method:
First add small cardamom, cloves, cinnamon, whole cumin fry it well.
Now add red chilies, masala chop it with mince, mix it in chopper.
Pour oil in a pan, add garlic cloves, onions for frying.
Now add mince masala then fry it.
Then add poppy seeds, potato, coconut milk, curry or curry paste powder and salt for frying.
Now add brown sugar, tamarind paste, peanuts mix it well.
Then add lemon grass, and take it out in a dish
Then add green coriander for garnishing then serve.
Ingredients For Rice Noodles With Chicken & Dark Soya Sauce:
Boiled rice noodles 1/2 packets
Chicken boneless 1/2 kg
Green beans 100 gm
Garlic 5-6
Green chilies 3-4
Oyster sauce 2 tbsp
Soya sauce 1 tbsp
Dark soya sauce 1 tbsp
Red chili flakes 1 tbsp
Egg 1
Brown sugar 1 tbsp
Oil 2-3 tbsp
Salt to taste
Method:
For making Rice Noodles:
Pour water in a pan add rice noodles.
When it turns to soft then filter it and set it into serving platter.
Now pour oil in a pan, add garlic cloves for frying.
Then add chicken for frying.
Now add green beans, chopped red chilies, egg, salt , oyster sauce, soya sauce, fry it.
Now add brown sugar, and add noodles mix it then dish out and serve.
