Yakhni Pulao, Chicken Masala And Double Mango Pudding by Zubaida Tariq

Ingredients For Yakhni Pulao:

  • Rice  400 gm
  • Chicken boneless  175 gm
  • Oil  1 cup
  • Water  3 cups
  • Green chilies  2
  • Chopped onion  4
  • Ginger paste  1 tsp
  • Garlic paste 1 tsp
  • Cumin powder  1 tsp
  • Yogurt  2 tbsp
  • Salt  to taste

For Stock:

  • Garlic 2
  • Water  2 cups
  • Ginger Small  1 piece
  • Cumin  1 tsp
  • fennel seeds  1 tsp
  • Coriander seeds  1 tbsp

Method:

  1. For stock, make a bag add whole garlic, ginger, chopped coriander, white cumin, fennel then tie it.
  2. Now take a pan, add chicken boneless, water and masala cook it on low temperature.
  3. When the mutton is tendered then add stock.
  4. Then take out the ready stock from mutton, then filter it.
  5. After that add rice, leave it for half an hour.
  6. Then add chopped onions, let it cook on low temperature, take out the half onions and spread it on a paper.
  7. Now add ginger garlic paste, chopped garlic paste, chopped green chilies, yogurt, roast it well and stir it.
  8. Then add chicken and roast it.
  9. After that add stock and rice mix it and let it cook for  1 minute.
  10. When it is boiled first time then cook it on low temperature.
  11. Cover the pan and cook it for 20 minutes, until the water disappears.
  12. Delicious stock pulao is ready serve it hot.

Ingredients For Double Mango Pudding:

  • Fresh milk  1 liter
  • Big mangoes  4-5
  • Corn flour  3 tbsp
  • Fresh cream  2 packets
  • Strawberry jelly powder
  • Sugar 1 cup
  • Lemons  2
  • Sponge cake 1
  • Hot milk  1 cup

Method:

  1. Pour milk add sugar let it cook.
  2. Now pour cool water, add corn flour in water, stir it continuously make it thick.
  3. Then add mangoes, peel its skin, make its long slices.
  4. Add cream, strawberry jelly powder mix it in hot water.
  5. When all the ingredients are mixed well then put the corn flour in a wide and spread dish, put some cornflour custard on its base.
  6. Then put the slices of sponge cake, pour milk, lemon juice and mango slices.
  7. Now add jelly cubes, again custard, then milk, lemon juice, then jelly and custard on its top.
  8. Then cream, mango and jelly for decoration and make it cool and serve the pudding.

Ingredients For Chicken Masala:

  • Chicken boneless  1 kg
  • Mint leaves  1 bunch
  • Yogurt  1 cup
  • Oil  1 cup
  • Green chilies 4
  • Lemon  4
  • Mustard oil  1/2 cup
  • Cumin powder  1 tsp
  • Black pepper  1 tsp
  • Red chili powder 1 tbsp
  • Gram flour 2 tbsp 
  • Ginger powder 2 tbsp
  • Papaya paste  1/2 tbsp
  • Bihari masala  2-3 tbsp
  • Salt  to taste

Method:

  1. Take a boneless chicken, chopped mint, yogurt, chopped green chilies, chopped white cumin, chopped black pepper, chopped red chilies, roast the flour in oil, add chopped ginger, chopped and raw papaya, bihari masala, salt and leave it for an hour.
  2. Now put the chicken with masala, pour oil, add olive oil let it cook.
  3. When the water dries then roast it lightly simmer it on low temperature, when the oil starts to comes up then chicken masala is ready.
