Chicken Vidalo, Chilli Fried Wings And Five Spice Green Chutney by Chef Gulzar

Ingredients For Chicken Vidalo:

  • Chicken  1 kg
  • Ginger  1 inch piece
  • Garlic  8-10 cloves
  • Onion  2-3
  • Kashmiri mirch  8-10
  • Cumin seeds 1 tbsp
  • Cloves  6-7
  • Cinnamon  2 pieces
  • Black pepper  1 tsp
  • Badyan flower  3-4
  • Poppy seeds  1 tsp
  • Tamarind paste  1/2 cup
  • Vinegar  3-4 tbsp
  • Curry leaves  3-4 tbsp
  • Oil  1/2 tsp
  • Salt  to taste

Method:

  1. First take a ginger, garlic, kashmiri chilies, tamarind paste, vinegar blend them all and make its paste thick.
  2. Now put this into a bowl, marinate the chicken with it and leave it for half an hour.
  3. Then pour oil in a pan, add cinnamon, cloves, whole cumin make it crispy.
  4. Now add onions fry it.
  5. Then add marinated chicken, fry it on high temperature.
  6. Now add poppy seeds, star anise seeds, black pepper, salt mix it and cook.
  7. Now add water and cook till the chicken tenders.
  8. When it is tendered then add curry leaves simmer it for 2 to 3 minutes.
  9. When the simmer is done then dish out it and serve.

Ingredients For Chili Fried Wings:

  • Chicken wings  1 kg
  • Garlic paste  2 tbsp
  • Red chili paste  4 tbsp
  • Flour  1-2 tbsp
  • Tamarind paste  3-4 tbsp
  • All spice powder  1 tsp
  • Turmeric powder  1 tsp
  • Cumin powder  1/2 tsp
  • Brown sugar 1 tbsp
  • Oil  to fry
  • Salt  to taste
  • Salad leaves  to garnish
  • Tomato to garnish

Method:

  1. Take a mixing bowl add garlic paste, chopped red chili paste, flour, tamarind paste, chopped garam masala, chopped turmeric, chopped cumin, brown sugar, salt mix it well and marinate the chicken with it.
  2. Now pour oil in a pan as needed, fry the wings.
  3. Then put salad leaves for garnishing then serve.

Ingredients For Five Spice Green Chutney:

  • Green coriander 1 bunch
  • Green chilies 10-12
  • Garlic  6-8
  • Lemon juice  1/2 cup
  • Mint leaves  1 bunch
  • Olive oil  1/2 cup
  • Sugar  1 tbsp
  • Salt to taste

Method:

  1. Take a pan, add water, green coriander, green chilies, garlic cloves, sugar, chopped mint, boil it for 5 minutes.
  2. Blend it with water along lemon juice, olives oil salt blend it smoothly.
  3. Five spice green chutney is ready.
