Ingredients For Dahi Baray Ka Masala:
Whole red chili 6-8
Dried ginger powder 1/2 tsp
Salt 1/4 tsp
Black salt 1/4 tsp
Tartary 1/4 tsp
Fennel seeds 1 tbsp
Whole coriander 3 tbsp
Cumin seeds 2 tbsp
Method:
First add whole coriander, cumin, fennel and whole red chilies roast it well.
Now add fennel seeds, black salt and tartary chop it thick.
Dahi baray masala is ready.
Ingredients For Dahi Phulki:
Yogurt 1/2 kg
White lentil flour 1/2 cup
Green gram flour 1/2 cup
Black pepper powder 1/2 tsp
Soda 1/4 tsp
Oil for frying
Salt as required
For making Yogurt:
Garlic 4 cloves
Red chili powder 1 tbsp
Red chili powder 1/2 tsp
Salt as required
For Bhagar:
Garlic cloves 2
Cumin seeds 1 tbsp
Oil 3 tbsp
Method:
First add mash lentil flour, moong lentil flour in water beat it well.
Now add salt, chopped black pepper, soda and leave it for a while.
Then make small phulkiyan fry it.
After that add beaten garlic cloves, chopped red chilies, salt, chutney.
In the end add garlic cloves, chopped cumin, oil give it bhagar.
Ingredients For Papri:
Flour 250 gm
Oil 5 gm
Carom 1/2 tsp
Cumin seeds 1/2 tsp
Salt as required
Method:
First add flour, pour oil, carom, salt knead it hard.
Now leave it for 15 minutes.
Then make small portions fry it in hot oil fry it well.
Ingredients For Chaat Masala:
Fennel seeds 50 gm
Cumin seeds 50 gm
Whole coriander 50 gm
Whole round chilies 50 gm
Black salt 50 gm
Tartary 1 tsp
Carom 1 tbsp
Black chili 1 tbsp
Noshader 1/2 tsp
Hing 1/2 tsp
Mint leaves 1/2 tsp
Method:
Grind all the above ingredients well in a chopper.
Chaat masala is ready.
