Chocolate Fudge Pudding, Gulab Ka Sharbat, Arabi Paratha And Khajla by Shireen Anwer

Ingredients For Chocolate Fudge Pudding:

For Fudge Topping:

  • Butter  3 ounce
  • Brown sugar  3 ounce
  • Golden syrup  3 tbsp
  • Coco powder  2 tbsp
  • Fresh cream  4 tbsp
  • Walnuts chopped  4 tbsp

For Pudding:

  • Eggs  4
  • Caster sugar  8 ounce
  • Butter  8 ounce
  • Flour  8 ounce
  • Baking powder  4 tsp
  • Chocolate essence  1 tsp

Method:

  1. For making fudge topping take a sauce pan, add butter, brown sugar, golden syrup, cocoa powder, fresh cream and walnuts cook it well, until it becomes to boil, stir it continuously, boil it for 1 to 2 minutes.
  2. Now make it cool on grease ring mold or pan.
  3. For making pudding mixture, take a bowl add egg, caster sugar, butter, flour, baking powder, chocolate essence stir it with wooden spoon for 5 minutes.
  4. Now put it on fudge mixture and bake it on 150 degree C for 45 minutes and leave it for 10 minutes.
  5. Now serve it hot with custard or vanilla essence.

Ingredients For Gulab Ka Sharbat:

  • Sugar  750 gm
  • Water  1 1/2 glass
  • Arq-e- gulab 1 cup
  • Red food color  1/4 tsp

Method:

  1. Take a pan, add sugar, water cook it for 10 minutes, until the sugar is saturated and becomes thick.
  2. Now take it out add arq-e-gulab and red color mix it well.
  3. Then make it cool and fill it into sterilized bottle.

Ingredients For Arabi Paratha:

For Paratha:

  • Flour  1 1/2 cup
  • Wheat flour  1/2 cup
  • Salt  1/2 tsp
  • Sugar  1 tsp
  • Ghee  for frying

For Filling:

  • Mince Chili powder  1/2 kg
  • Chili powder  1 tsp
  • Ginger garlic  1 tsp
  • Chopped onion  1 cup
  • Green chilies chopped 4
  • Tomato  1 chopped
  • Eggs 2 to 3
  • All spice  1 tsp
  • Spring onion chopped  1/2 cup
  • Coriander leaves chopped 2 tbsp
  • Mint leaves chopped  2 tbsp

Method:

  1. Take a mince, onion, chopped red chilies, salt, ginger garlic paste boil it well, until the water evaporates.
  2. Now add green chilies, mint, green onion, tomatoes and keep it on a side.
  3. Now for dough take a flour, salt and sugar mix it and knead it make small portions.
  4. Then pour oil sprinkle flour, cut it and make portions again.
  5. Now roll it till the dinner size plate, put ready fillings, vegetables, garam masala, beaten egg, put it on its top cover it with the 2nd rolled roti.
  6. Then roll it in square shape and shallow dry.

Ingredients For Khajla:

  • Flour  1/2 kg
  • Ararot  250 gm
  • Ghee  250 gm
