Ingredients For Chicken Bites:
Chicken, boneless 1/2 kg
Cumin seeds 2 tsp
Coriander seeds 1 tbsp
Black peppercorns 10
Cloves 3-4
Cinnamon 1 inch stick
Onion, slices 1
Ginger, sliced 1 inch piece
Garlic 4 cloves
Green chilies 3-4
Lemon juice 1 tbsp
Salt to taste
Oil 2 tbsp
Method:
Dry roast cumin seeds, coriander seeds, peppercorns, cloves and cinnamon.
Mix together onion, ginger, garlic, green chilies, lemon juice and the roasted spices and grind to a fine paste.
Add salt and mix well. Marinate chicken pieces for two hours in the refrigerator.
Heat oil and cook the marinated chicken for five minutes, stirring continuously.
Serve hot.
Ingredients For Samosas With Cholay:
Samosas 4
Yogurt 4 tbsp
Sweet date 4 tbsp
Green chutney 4 tbsp
For Cholay:
Chickpeas 1 cup
Salt to taste
Tea leaves 2 tsp
Ghee 2 tbsp
Onions 2 medium
Ginger paste 1 tsp
Garlic paste 1 tsp
Cholay masala 4 tbsp
Fresh tomato puree 3/4 cup
Fresh coriander leaves 4 tbsp
Method:
Take the chickpeas with three cups of water and salt in a pressure cooker.
Tie up the tea leaves in a piece of muslin cloth and lower it into the pressure cooker.
Close the lid and pressure cook till five to six whistles or till the chickpeas are soft.
Drain and set aside.
Reserve one fourth cup of stock for cooking.
To make cholay, heat two tbsp oil, add onions and saute on low heat till light golden.
Add ginger paste and garlic paste and saute for half a minute.
Add three tbsp of cholay masala, continue to saute for another minute, add tomato puree and cook on low heat for two to three minutes.
Add the boiled chickpeas along with the reserved stock and simmer for five minutes or till all the water is absorbed and oil surface on top.
Sprinkle the remaining cholay masala and coriander leaves, stir and cover immediately.
Remove from heat and keep warm.
To serve, place the samosas on a serving platter, crush lightly and then top it up with a generous portions of the prepared cholay.
Pour yogurt over the cholay, drizzle sweet date and tamarind chutney and green chutney and serve immediately.
Ingredients For Coffee Cookie Shake:
Coffee ice cream 3 scoops
Cold milk 1-1/2 cups
Crushed ice 1 cup
Chocolate cookies 2 cups
Method:
Blend coffee ice cream with milk, cookies and ice until smooth and well combined.
Pour in glasses and serve chilled.
