Chana Chaat, Spicy Wings And Dahi Ki Chutney by Rida Aftab

Ingredients For Spicy Wings:

  • Chicken wings 1/2 kg
  • Flour  1 cup
  • Eggs  2
  • Ginger  1 tsp
  • Red chili  1 tsp
  • Worcestershire sauce  1 tbsp
  • Oil  for frying
  • Salt & black pepper  as required
  • Corn flour  2 tbsp
  • Fried cumin seeds  1 tsp
  • Green chili paste  1 tsp
  • Chinese salt  1/2 tsp

Method:

  1. First add chicken wings, add ginger garlic, red chilies, salt, black pepper, roasted cumin, green chili paste, Chinese salt and worcestershire sauce for marination.
  2. Now add flour coat it with cornflour.
  3. Then dip it into beaten egg deep fry it in hot oil, until it becomes golden brown.
  4. Spicy wings are ready.

Ingredients For Chana Chaat:

  • Boiled chickpeas  1/2 kg
  • Boiled potato 1/2 kg
  • Onion  2
  • Mint leaves  1/2 bunch

For Yogurt Chutney:

  • Yogurt  250 grams
  • Green chilies  6
  • Water  2 cups
  • Green coriander 1/2 bunch
  • Salt  1/2 tsp
  • Mint leaves  2 tbsp

For Making Tamarind:

  • Chutney  1 cup
  • Tamarind juice 1 cup
  • Water  1 tsp
  • Cumin seeds  1 tbsp
  • Jaggery  2 tsp
  • Salt

For Making Chaat Masala:

  • Round Chilies 12
  • Carom  1 tsp
  • Cumin seeds  1 tsp
  • Fennel seeds  1 tsp
  • Whole coriander  1 tbsp
  • Black salt  1/2 tsp
  • Tartary  1/2 tsp

Method:

  1. First take a blender add yogurt, green chilies, green coriander, mint, salt and water chop it well.
  2. For tamarind chutney, take a sauce pan, add tamarind juice, cumin, chopped red chilies, salt, water and jaggery.
  3. For making Chaat masala: Put round chilies, carom, cumin, fennel, whole coriander roast it well.
  4. Then add black salt and tartray mix it well.
  5. For serving take a plate, add boiled peas, boiled potatoes.
  6. Now put tamarind chutney and yogurt chutney.
  7. Then add onion, mint sprinkle ready masala.
  8. Tasty Chana chaat is ready.

Ingredients For Dahi ki Chutney:

  • Yogurt  1 cup
  • Green chili  2
  • Mint leaves  1/4 bunch
  • Cumin seeds  1 tsp
  • Tamarind juice  2 tsp
  • Salt  as required

Method:

  1. Beat the yogurt.
  2. Now add mint, cumin and green chilies make its chutney.
  3. Along tamarind juice, salt.
  4. Chutney is ready.
