Bhail Pori, Chana Pakora And Herbal Drink by Chef Gulzar

Ingredients For Chana Pakora:

  • Gram flour 1/2 cup
  • Rice flour  1/2 cup
  • Boiled chickpeas  200 gm
  • Chopped green chilies  8 to 10
  • Chopped green coriander 1/2 bunch
  • Mint  1/2 bunch
  • Cumin powder 1 tbsp
  • Crushed red chili 1 tsp
  • Chopped onion 1
  • Garlic paste  1 tsp
  • Baking soda 1/3 tsp
  • Oil  for fry
  • Salt  to taste

For Garnish:

  • Salad leaves  2 to 3
  • Tomato  2 to 3

Method:

  1. First leave the chickpea in water with soda.
  2. Then filter it and boil, chop it.
  3. Then take a mixing bowl add gram flour, rice flour, chopped green chilies, green coriander, mint, chopped cumin, chopped red chilies, chopped onion, garlic paste, baking soda and salt mix it with hand and add water, make batter like pakoras.
  4. Now pour oil heat it low deep fry the pakora.
  5. Put salad leaves and tomatoes for garnishing then serve.

Ingredients For Bhail Pori:

  • Puff rice 4 cup
  • Sew  2 cup
  • Boiled potato 2
  • Chopped tomato 2
  • Chopped onion 1
  • Chopped carrot  1
  • Chopped cucumber  1/2 cup
  • Turmeric powder  1 tsp
  • Red chili powder as required
  • Salt  to taste

For green coriander:

  • Green coriander  1/2 bunch
  • Green chilies  6-8
  • Lemon juice  as required
  • Salt  to taste

For Sweet Sour:

  • Imli paste  1 cup
  • Deseeded dates  1/2 cup
  • Brown sugar  1 tbsp
  • Red chili powder  2 tsp
  • White cumin  2 tbsp
  • Salt  to taste

Method:

For making Bhail pori:

  1. Take a mixing bowl, add carrot, chopped onion, mur murray, sew, chopped cucumber, chopped tomatoes and boiled potato cubes.
  2. Then add chopped red chilies, turmeric powder, salt and mix it.

For Making Sweet Sour Chutney:

  1. Put blended paste, roasted white cumin, chopped red chilies, brown sugar and salt. Chutney is ready.

For Making Green Chutney:

  1. Put green chilies, green coriander, lemon juice, salt blend it well in a blender.
  2. Green chutney is ready.

For Serving:

  1. Put bhail pori in a serving dish ad pour chatniyan on top then serve.
  2. Delicious bhail pori is ready.

Ingredients For Herbal Drink:

  • Arq maka  800 ml
  • Small cardamom  5 to 6
  • Almond  8 to 10
  • Melon seeds  2 to 3 tbsp
  • Dry rose petals  1 cup
  • Sugar   as required
  • Ice as required

Method:

  1. Blend all the ingredients above in a blender.
  2. Then take a muslin cloth and filter it in arq maka, add ice then serve.
