Papri Chaat And Sev Bhaji by Chef Zakir

Ingredients For Papri Chaat:

  • Fine wheat flour 125 gm
  • Semolina  2 tbsp
  • Potatoes boiled  2
  • Chickpeas boiled  1 cup
  • Tamarind paste  1/2 cup
  • Coriander leaves  1/4 bunch
  • Mint leaves  1/4 bunch
  • Carom seeds  1/4 tsp
  • Yogurt  1 cup
  • Chaat masala  1 tbsp
  • Salt  to taste
  • Oil  for fry

Method:

  1. First take a white flour, add salt, nutmeg, semolina, water knead it well.
  2. When the dough becomes soft then keep it on a side.
  3. Make small balls and knead it, deep fry it in hot oil.
  4. Now add boiled small potatoes, boiled chickpea, tamarind paste, chopped green coriander, chopped mint and yogurt mix it well.
  5. Then add chaat masala and salt mix it and put the papri chops then serve.

Ingredients For Sev Bhaji:

  • Sev  1 cup
  • Onion  1
  • Tomato  1
  • Coriander leaves  1/4 bunch
  • Mint leaves 1/4 bunch
  • Green chilies 2-3
  • Salt to taste
  • Chaat masala  1 tsp
  • Pomegranate seeds 1/2 tsp
  • Red pepper  1/2 tsp
  • Yogurt  1 cup
  • Green chutney  1-2 tsp
  • Tamarind paste  1/2 cup

Method:

  1. First take a bowl add onions, chopped tomatoes, chopped green chilies, salt, chaat masala, chopped red chili, pomegranate seeds, green coriander and mint mix it.
  2. Now take a bowl add sev with mixed masala.
  3. Then take a third bowl add yogurt, green chutney, salt and remaining chaat masala beat it well and put it on sev then serve.
