Pahari Murgh And Chicken Kabab With Tartar Sauce by Rida Aftab

Ingredients For Pahari Murgh:

  • Chicken  1 kg
  • Yogurt  1-1/2 gm
  • Onion  250 gm
  • Cardamom  6
  • Oil  1 cup
  • Green chili 50 gm
  • Salt  1 tsp
  • Whole black pepper 1 tsp
  • White cumin seeds  1 tsp
  • Chopped nutmeg/ mace  1 tsp
  • Kewra  1 tbsp
  • Ginger garlic paste  2 tsp
  • Turmeric  1/2 tsp
  • Chopped garlic  2 tbsp

Method:

  1. Take a pan add onions for frying.
  2. Then keep its temperature low dry its water.
  3. After that add chicken, salt, turmeric, whole black pepper, ginger garlic paste, nutmeg mace, green chilies, yogurt mix it well.
  4. Now keep it on low medium temperature.
  5. When the chicken tenders then roast it, pour water.
  6. When it comes to boil to 2 to 3 times then add cardamom and white cumin mix it well.
  7. Along kewra and sprinkle chopped ginger, turn off the stove.
  8. Delicious pahari murgh is ready.


Ingredients For Chicken Kabab With Tartar Sauce:

  • Chicken boneless 1/2 kg
  • Egg 1
  • Boiled potatoes 1
  • Chopped onion 2
  • Green chilies  4
  • Green coriander  1/2 bunch
  • All spice powder 1 tsp
  • Ginger garlic paste  1 tbsp
  • Red chili powder 2 tsp
  • Cumin seeds 2 tsp
  • Salt  1/2 tsp
  • Oil  for frying

For Making Tartar Sauce:

  • Mayonnaise 1/2 cup
  • Cream  1/2 cup
  • Chopped pickle cucumber 1 tbsp
  • Chopped parsley  1 tbsp
  • Lemon juice  1 tbsp

Method:

  1. First add chicken boneless cook it in steam, make it shredded.
  2. Now add boiled potatoes, ginger garlic paste, chopped red chilies, cumin, salt, egg, chopped garam masala, chopped onion, green coriander and green chilies mix it well.
  3. Then make its kabab fry it in hot oil then serve.
  4. For making tartar sauce, take a bowl add mayonnaise, cream, chopped achari cucumber, chopped parsley and lemon juice then mix it.
