Ingredients For Meva Biryani:

  • Chicken  1/2 kg
  • Rice  1/2 kg
  • Yogurt  250 gm
  • Yellow color  1 pinch
  • Mint leaves  1 bunch
  • Potato  2
  • Onion 2
  • Green chilies 4
  • Star anise  4
  • Mix dry fruits  1 cup
  • Oil  1/2 cup
  • Plum  50 gm
  • Kewra  1 tsp
  • Cumin seeds  1 tsp
  • Black pepper  1 tsp
  • Allspice powder 1 tsp
  • Turmeric  1 tsp
  • Ginger garlic paste  1 tbsp
  • Nutmeg/ mace  1/2 tsp
  • Red chili powder 2 tsp
  • Salt  2 tsp

Method:

  1. First pour oil add onions for frying.
  2. Now add potatoes for frying then take it out.
  3. Then put onion, yogurt, ginger garlic paste, chopped red chilies, salt, turmeric, star anise, nutmeg mace, chopped garam masala and plum leave it for half an hour.
  4. Now pour oil in a pan, cover it for 10 minutes, then add potato.
  5. When the potato and chicken are tendered then add green chilies and mint.
  6. After that add boiled rice, pinch of yellow color and kewra and simmer it for 15 minute then turn off the stove.
  7. Take it out in a dish add dry fruits then serve.

Ingredients For Zafrani Zarda Khoya:

  • Boiled sela rice  1/2 kg
  • Sugar  250 gm
  • Khoya  250 gm
  • Ghee  250 gm
  • Cardamom  6
  • Zafran  1/2 tsp
  • Kewra  1/2 tsp
  • Yellow food color  1/2 tsp
  • Raisins  2 tbsp
  • Almonds and pistachio  2 tbsp
  • Coconut (chopped) 2 tbsp
  • Asharfiyan  2 tbsp

Method:

  1. Take a bowl boil the rice and pinch of yellow color and when it remains to 1/4th then filter it.
  2. Now take another pan add ghee, cardamom.
  3. When the cardamoms starts to smell then add sugar and water.
  4. Syrup is ready, then add almonds, pistachio, saffron, asharfiyan, raisins, coconut, khoya and kewra in rice then leave it for half an hour.
  5. Delicious special zarda is ready.
