Chicken Tikka Chili Fry, Chatpatay Potato Bites And Mutton Daalcha by Zubaida Tariq

Ingredients For Chicken Tikka Chili Fry:

  • Chicken boneless  1/2 kg
  • Red chili powder 1 tsp
  • Crushed cumin  1 tsp
  • Ginger garlic paste  1 tbsp
  • All spice powder  1/2 tsp
  • Black pepper  1/2 tsp
  • Orange color  1/3 tsp
  • Chinese salt  1/2 tsp
  • Yogurt  2 tbsp
  • Lemon juice  2 tbsp
  • Salt  to taste

For Sauce:

  • Chopped capsicum 1
  • Onion  1
  • Tomato 1
  • Green chilies  4
  • Roasted cumin  1 tsp
  • Oil  1 tbsp
  • Black pepper   1/2 tsp
  • Chinese salt  to taste
  • Red chili flakes  1/2 tsp
  • Lemon juice  3 tbsp

For Garnish:

  • Green Coriander 2 tbsp
  • Butter  2 tbsp
  • Chopped ginger 2 tbsp

Method:

  1. First marinate the chicken with chopped red chilies, roasted and chopped cumin, ginger garlic paste, garam masala, chopped black pepper, orange color, chinese salt, yogurt, lemon juice and salt.
  2. Now pour oil in a pan add marinated chicken cook it till becomes dry.
  3. After that add chicken simmer it with coals.
  4. For sauce add butter, pour oil add capsicum and onion for frying.
  5. Then add chopped ginger, chopped green chilies, onion, roasted cumin, chopped black pepper, chinese salt, chopped red chilies and lemon juice.
  6. Now add chicken and tomato slices simmer it for 2 minutes.
  7. Then add green coriander, butter and ginger for garnish then serve.

Ingredients For Chatpatay Potato Bites:

  • Chopped potatoes 4
  • Oil  1 tbsp
  • Green coriander  1/2 cup
  • Mint leaves  10-15
  • Chopped ginger  1 inch piece
  • Garlic   5-6 cloves
  • Red chili flakes  1 tsp
  • Oil  for deep frying
  • Salt to taste
  • Lemon juice  1 tbsp

Method:

  1. Take a pan pour oil add chopped potato for frying, now take it out and keep it on a side.
  2. Then add green coriander, mint leaves, ginger and garlic pieces grind it in a grinder make its paste.
  3. After that pour oil add paste and chopped red chilies fry it for 3 to 4 minutes.
  4. Now fry it by adding salt, lemon juice, cook it for 2 minutes.
  5. Chatpatay potato bites are ready.

Ingredients For Mutton Daalcha:

  • Mutton  1/2 kg
  • Split red lentil 1 cup
  • Tomatoes  2
  • Curry leaves  few
  • Green chilies  4
  • Red chili powder 1 tbsp
  • Turmeric  1 tsp
  • Ginger garlic paste 1 tbsp
  • Salt  to taste
  • Tamarind paste  1 cup
  • Cinnamon powder 1 tsp
  • Onion  2
  • Oil  1 cup

Method:

  1. Pour oil add onion, mutton, onion ginger garlic paste, turmeric, chopped red chilies and salt let it cook.
  2. Put the masoor lentil in water let it boil, put it into blender when it becomes tender.
  3. When its water dries then roast it lightly add chopped lentil, tamarind paste, green onion, curry leaves and tomatoes.
  4. Green chilies tender it.
  5. Then add roasted cinnamon, simmer it for 5 minutes.
  6. Serve it with simple rice.
