Fish Biryani, Tawa Keema And Mocha Drink by Zarnak Sidhwa

Ingredients For Tawa Qeema:

  • Garlic  1 tbsp
  • Ginger  1 tbsp
  • Desi ghee  1/4 tsp
  • Green chilies  3
  • Red chili  2 tsp
  • Kasoori methi  1 tsp
  • Turmeric powder  2 tsp
  • Garam masala  1 tsp
  • Fennel seeds  1 tsp
  • Mango pickle paste 1 tbsp
  • Salt  to taste
  • Onion  4
  • Spring onion 2
  • Tomatoes  5
  • Chicken mince  500 gm
  • French coriander  1/2 bunch

Method:

  1. Saute garlic and ginger on tawa with desi ghee and add all the spices along with the onions, chopped tomatoes and pickle paste and cook well.
  2. Then add mince, cook for at least 10 minutes and finally put fresh coriander and serve.

Ingredients For Fish Biryani:

For Marinate:

  • Salt  to taster
  • Black pepper  to taste
  • Turmeric powder  1 tsp
  • Garam masala  1 tbsp
  • Corn flour 1 tsp
  • Eggs  2

For Biryani:

  • Oil  1/4 cup
  • Mix whole spices 3 tbsp
  • Onions  2-3
  • Ginger paste  2 tbsp
  • Garlic paste 2 tbsp
  • Tomatoes  2
  • Coriander  3 tbsp
  • Yogurt  1/2 cup
  • Rice  1 kg
  • Fish fillet  1/2 kg
  • Cumin seeds  2 tsp
  • Capsicum diced  1
  • Green peas  2 tbsp
  • Cashew nuts  2 tbsp
  • Raisins  2 tbsp
  • Saffron essence  1 tsp
  • Kewra water  2 tbsp
  • Mint leaves  1 bunch
  • Red chili powder  1 tbsp

Method:

  1. Take fish cubes and add salt, pepper, turmeric, garam masala, corn flour, egg.
  2. Leave to marinate for a while.
  3. Deep fry the marinated fish in hot oil.
  4. Keep aside. In a pan melt ghee if using or add oil and add all the garam masala, onion, ginger paste and garlic paste, saute add tomatoes, coriander and yogurt.
  5. Add water as required. Add rice. when the rice is nearly done, leave to simmer for 20 minutes.
  6. In another fry pan, heat some oil and put cumin seeds.
  7. Add diced capsicum and onion and saute on a high flame.
  8. Add some gravy made with tomato puree, ginger, garlic paste and onions, cook till oil separates.
  9. Lastly add the fried fish and fold into gravy.
  10. Add kewra on the rice and serve by putting one layer of rice and one layer of fish masala.
  11. Garnish with fried onion and cashews and raisins.

Ingredients For Mocha Drink:

  • Coffee powder 2 tbsp
  • Hot water  2 tbsp
  • Milk  2 cup
  • Cream  1/2 cup
  • Chocolate ice cream  4 scoop
  • Drinking chocolate  4 tbsp

Method:

  1. Dissolve the chocolate in hot coffee.
  2. Pour in milk. Chill. whisk in cream.
  3. Pour over ice cream in the glasses.
  4. Serve immediately.
