One Pot Rice, Mocha Macron Cupcakes And Indian Style Drumsticks by Shireen Anwer

Ingredients For Mocha Macron Cupcakes:

For Cupcakes:

  • Flour  2 cups
  • Baking powder  2 tsp
  • Baking soda  1/4 tsp
  • Salt  a pinch
  • Vanilla essence 1 tsp
  • Oil  1 cup
  • Coffee 1 tsp
  • Eggs  3
  • Egg yolk  2
  • Butter milk  1/2 cup
  • Sugar  1 3/4 cup
  • Cocoa Powder  3 tbsp heaped

For Macaroons:

  • Egg whites  2
  • Sugar  1/2 cup
  • Vanilla essence  1 tsp
  • Desiccated coconut  1 1/2 cup

Method:

  1. For making cup cakes take a bowl pour oil, egg, egg white, sugar and vanilla essence beat it well.
  2. Now add flour, baking soda, baking powder.
  3. Add coffee, water mixture, butter milk fold it well.
  4. For making macaroni add egg white and sugar.
  5. Now add vanilla essence fold it in coconut.
  6. Then add cup cakes , line it muffin tray.
  7. Now add cake mixture, put it into line and put macron mixture on its top.
  8. Then bake it for 180 degree C for 25 min.

Ingredients For Indian Style drumstick:

  • Chicken drumsticks 1/2 kg
  • Yogurt  1/2 cup
  • Ground coriander roasted  1 1/2 tsp
  • Roasted and grounded cumin 1 1/2 tsp
  • Turmeric  1/2 tsp
  • Chili powder  1 tsp
  • Allspice
  • Orange color
  • Onion rings, mint tomato slices for garnishing

Method:

  1. First add chicken drum stick, give it cuts.
  2. Now add yogurt, roasted and chopped coriander, roasted and chopped cumin, turmeric, chopped red chilies and garam masala for marination leave it for 2 hours.
  3. Then bake it in oven for 30 minutes.
  4. Add onions and tomato slices for garnish then serve.

Ingredients For One Pot Rice:

  • Boneless chicken 300 gm
  • Oil  1/4 cup
  • Onion chopped 1/2 cup
  • Tomato puree  3 tbsp
  • Rice  300 gm
  • Capsicum thick sliced  1
  • Bhindi  100 gm
  • Peas  1/2 cup
  • Salt  1 1/2 tsp
  • Black pepper  1/2 tsp
  • Chicken powder  1 tbsp
  • Coriander leaves  2 to 3 tbsp

For Ginger And Chili Base:

  • Ginger garlic  1 tbsp
  • Crushed red pepper 1 tsp
  • Tomato puree  1/2 cup
  • All spice  1/2 tsp
  • Sugar  1 tsp

Method:

  1. First blend the ginger chili, ginger garlic, chopped red chilies, tomato puree, garam masala and sugar.
  2. Now take a boneless chicken, salt and chopped black pepper marinate it well.
  3. Then pour oil in a pan add chicken fry it for 5 minutes.
  4. Now add chopped onions, tomato puree, ginger garlic paste, chicken powder, water let it cook.
  5. Then add rice let it cook tender the rice.
  6. Now add capsicum slices, lady finger and peas simmer it for 10 minutes.
  7. Garnish it with green coriander then serve it hot.
