Maharaja Biryani, Lal Kaddu Ka Halwa And Badami Raita by Chef Gulzar

Ingredients For Maharaja Ki Biryani:

  • Rice  1/2 kg
  • Mutton 1/2 kg
  • Yogurt  250 gm
  • Onion  1
  • Cinnamon  4 sticks
  • Green cardamom  5
  • Boiled eggs  6
  • Cloves  4 to 6
  • Green chilies 10-12
  • Oil  1 cup
  • Green coriander  1/2 bunch
  • Mint  1/2 bunch
  • All spice powder 1 tsp
  • Turmeric powder  1 tsp
  • Whole cumin  2 tsp
  • Black cumin  1/2 tsp
  • Garlic paste  2 tbsp
  • All spice powder  2 tbsp
  • Food color  as required
  • Salt  to taste

Method:

  1. For making rice: Wash it and keep it in water for 2 hours.
  2. Now pour water, add chopped black cumin and salt boil it.
  3. When it starts to smell then boil it 1/4th and filter it keep it on a side.
  4. For Korma: Take a pan pour oil add whole cumin.
  5. Now add garlic paste for frying, along onions.Then add mutton breast roast it well.
  6. Now add yogurt, chopped red chilies chopped whole spices, turmeric and salt mix it and roast it.
  7. Then add water tender and let it cook.
  8. When it is tendered then make it thick and remove it from stove.
  9. For making layer: Add egg, pinch of yellow color pour water.
  10. When it shows color on egg fry it. add rice, egg, green chilies, green coriander and mint, then add remaining rice add boiled egg simmer it well.
  11. When the simmer is done then take it out in a dish then serve.

Ingredients For Lal Kaddu Halwa:

  • Red Pumpkin 1/2 kg
  • Milk  250 ml
  • Khoya  250 gm
  • Small cardamom  3 to 4
  • Kewra essence  few drops
  • Sugar  as required
  • Dry fruits  as required
  • Clarified butter  1/2 cup

Method:

  1. Boil the red pumpkin, add ghee and cardamoms make it crispy.
  2. Then add sugar and red pumpkin roast it well.
  3. Now add milk cook it.
  4. Then add khoya roast it well.
  5. When the halwa leaves ghee then add few drops of kewra essence mix it well.
  6. Take it out in a dish garnish it with dry fruits then serve.
