Chao Tom, Dragon Rice And Chinese Mixed Pickled by Chef Gulzar

Ingredients For Dragon Rice:

  • Chicken strips 500 gm
  • Rice  300 gm
  • Sliced mushroom 1/2 cup
  • Sliced carrot 1
  • Sliced capsicum  2
  • Chicken powder  2 tbsp
  • Soya sauce  4 tbsp
  • Black pepper 1 tsp
  • Garlic  4 to 5 cloves
  • Green onion  1 to 2 sticks
  • Chinese salt 1 pinch
  • Oil 4 tbsp
  • Sesame oil  1 tsp
  • Salt  to taste

Method:

  1. First wash the rice, keep it in water for 2 hours.
  2. Now boil it and filter keep it on a side.
  3. Then add mushroom, Carrot, capsicum, chicken slices and garlic cloves.
  4. After that pour oil add chicken and garlic roast it.
  5. Now add mushrooms, capsicum, soya sauce, chopped black pepper, chicken powder, salt, chinese salt, cook it well.
  6. Then add rice, pour oil on its top then simmer it on low temperature.
  7. When the simmer is done then take it out in a serving plate, garnish with green onion for garnish and serve.

Ingredients For Chao Tom:

  • Prawns  100 gm
  • Chicken mince  100 gm
  • Boneless fish  100 gm
  • Onion 1
  • Egg white  1
  • Brown onion 2 to 3
  • Green coriander  1/2 bunch
  • Mint  1/2 bunch
  • Garlic cloves  4 to 5
  • Brown sugar 1 tsp
  • Black pepper  1 tsp
  • Soya sauce  1 tbsp
  • Rice flour  1 to 2 tbsp
  • Oil  for fry
  • Carrot  as required
  • Salt  to taste

Method:

  1. First add prawns, chicken mince, garlic cloves, onion, brown sugar, egg whites, soya sauce, rice flour, chopped black pepper and salt make its paste.
  2. Now add carrot slices, pour oil make its paste, after that pour oil fry it on stir piece.
  3. Then take it out in a serving plate, garnish with green coriander, mint and brown onion and then serve.

Ingredients For Chinese Mixed Pickle:

  • Carrot 2
  • Cucumber  1
  • Whole red chili 2 to 3
  • Capsicum  1
  • Green onion  3 to 4 sticks
  • Ginger 1 stick
  • Onion 4
  • Sugar  2 cup
  • White vinegar 2 cup
  • Salt to taste

Method:

  1. Take a pan, add sugar, vinegar, salt and water cook it well saturate it.
  2. Now remove it from stove and keep it on a side, make it cool.
  3. Now add carrot, cucumber, capsicum, green onion, ginger, onion slices.
  4. Keep its flame high boil it and add vegetables boil it for 4 to 5 minutes, then filter the water.
  5. Now add vegetables into big jar, sprinkle sugar on its top and close the jar.
  6. Chinese mixed pickle is ready.
