Peri Peri Chicken & Sauce, Vegetable Tortillas And Garlic Rice by Chef Zakir

Ingredients For Peri Peri Chicken & Sauce:

  • Chicken with skin 1 whole
  • Ginger garlic paste 1 tbsp
  • Worcester sauce 2 tbsp
  • Salt  to taste
  • Lemon juice 2 tbsp
  • Oil 2 tbsp
  • Coal as required
  • Button chilies boiled  10-12
  • Kashmiri chilies boiled 5-6
  • Mustard powder 1 tbsp
  • Onion  1 medium
  • Garlic  4-5 cloves
  • Ginger  1 piece
  • Coriander powder 1 tbsp
  • Vinegar  1/4 cup
  • Oil  1/4 cup

Method:

  1. First marinate the chicken with red chilies, boiled and dry red chili, vinegar chop it. along mustard seeds, onion, garlic, ginger, chopped coriander, salt and lemon juice, chop it well.
  2. When the sauce becomes ready then keep it on a side.
  3. Now add chicken with skin cut it into small pieces and stir fry it.
  4. Now add chicken, ginger garlic paste, wooster sauce, salt, lemon juice pour some oil for marination.
  5. Now add sauce, marinate it well and leave it for 1 hour.
  6. Grill the chicken on coals, keep it in mind do not keep its flame so high, then keep it on a side for frying.
  7. Tasty peri peri chicken and sauce is ready.

Ingredients For Vegetable Tortillas:

  • Pita bread 4
  • Oil  2-3 tbsp
  • Onion Chopped 1
  • Red capsicum  1
  • Rice boiled 100 gm
  • Chili powder 1 tsp
  • Kidney beans  1/2 cup
  • Water  1/4 cup
  • Pineapple chopped 2-3 rings
  • Sour cream  2 tbsp
  • Cheddar cheese  100 gm
  • Mozzarella cheese 100 gm
  • Salt  to taste

Method:

  1. First pour oil add chopped onions and red capsicum cook it for 1 to 2 minutes.
  2. Then add boiled rice, chopped red chilies, chopped red beans, water and pineapple cover and let it cook.
  3. When water dries then add sour cream, salt turn off the stove.
  4. Now fry the pita bread with oil, so that it becomes soft, roll it out.
  5. Then add red beans, fill its filling add mozzarella cheese and cheddar cheese mix it well fold it nicely.
  6. Now add remaining cheese spread it on its top, bake it on 180 degree C for 5 to 6 minutes, serve it hot.

Ingredients For Garlic Rice:

  • Rice 300 gm
  • Egg  2
  • Garlic  8 -10 cloves
  • Spring onion 2
  • Peas boiled 1 cup
  • Carrot chopped 1
  • Salt to taste
  • Black pepper powder 1/2 tsp
  • White pepper powder 1/4 tsp
  • Worcester sauce 2 tbsp
  • Soya sauce 1 tbsp
  • Oil  1/4 cup

Method:

  1. First add green onion, garlic cloves, take a bowl add beaten eggs.
  2. Then pour oil in a pan roast the garlic.
  3. Now add eggs, green onion, chopped carrot, boiled peas and boiled rice.
  4. Add salt, chopped black pepper, white pepper, soya sauce, worcester sauce mix it well take it out in a dish then serve.
