Fried Noodles, Szechuan Sauce And Szechuan Chicken BBQ by Chef Gulzar

Ingredients For Szechuan Sauce:

  • Kashmiri chili sauce 1/2 cup
  • Soya sauce 1/2 cup
  • Tomato paste 1/2 cup
  • Vinegar  4 tbsp
  • Chopped garlic 10 cloves
  • Oyster sauce 4 tbsp
  • Chicken stock  1 cup
  • Brown sugar 1/2 cup
  • Sesame oil 1 tbsp
  • Chinese salt 1 tsp
  • Oil  4 tbsp

Method:

  1. First pour oil add chopped garlic for frying.
  2. Then add kashmiri chili sauce, tomato paste, soya sauce, wooster sauce roast it for 1 to 2 minutes.
  3. Now pour oil add stock, brown and make its paste in grinder.
  4. After that roast it more for 1 minute make its thick paste.
  5. Szechuan Sauce is ready.

Ingredients For Fried Noodles:

  • Egg noodles 1 packet
  • Sliced chicken 250 gm
  • Sliced tomato 1
  • Sliced onion 1
  • Green onion  2-3 sticks
  • Sliced cabbage  100 gm
  • Chopped garlic  2 tbsp
  • Kashmiri chili 1/2 cup
  • Szechuan sauce 4 tbsp
  • Chicken stock 500 gm
  • Corn flour 1 to 1-1/2 tbsp
  • Oil 2-3 tbsp
  • Salt to taste

Method:

  1. First pour oil add egg noodles and oil boil it for 3 to 5 minutes.
  2. Then take it out and pour cool water, when the temperature becomes normal then fry the noodles, spread it on noodles.
  3. Then add chicken slices, roast it well.
  4. Now add szechuan sauce mix it nicely.
  5. Now add chicken stock cook it well.
  6. Add cabbage, corn flour mix it well.
  7. Take a bowl add noodles mix it.
  8. Now spread this mixture on fried noodles.
  9. Make the talhar mirch crispy and serve it with noodles.

Ingredients For Szechuan Chicken BBQ:

  • Chicken with skin  1
  • Szechuan paste  6 tbsp
  • Salad leaves as required
  • Lemon  1 to 2
  • Charcoal  1 piece

Method:

  1. First make the chicken pieces, cut it with help of knife, then paste the szechuan paste on chicken for 2 to 3 hours and leave it.
  2. Then steam it for 15 to 20 minutes.
  3. Then take it out from oven change its color and give it steam of coals.
  4. Add salad leaves, lemon for garnish then serve.
