Pipli Kabab, Old Baked Custard And Mayo Chicken by Chef Zakir

Ingredients For Old Baked Custard:

  • Egg 5
  • Sugar 1/2 cup
  • Dry milk powder 2 tbsp
  • Vanilla essence few drops
  • Milk  1/2 liter
  • Nutmeg ground  a pinch

Method:

  1. Take a bowl add egg and sugar mix it well.
  2. When sugar is saturated add dry milk mix it well then add milk.
  3. Add few drops of vanilla essence.
  4. Now place it in oven proof dish, fill it with some water.
  5. Now sprinkle nutmeg mace.
  6. Now bake it in oven on 180 degree C for 35 to 40 minutes.
  7. Then take it out from oven make it cool.
  8. After that make the custard cool then serve.

Ingredients For Mayo Chicken:

  • Chicken 1/2 kg
  • Yogurt 125 gm
  • Fresh cream 1/2 cup
  • Fennel seeds crushed 1 tsp
  • Mayonnaise 2 tbsp
  • Turmeric  1/2 tsp
  • Green chilies  4-5
  • Ginger garlic paste 1 tbsp
  • Cumin seeds crushed 1 tsp
  • Cloves 6
  • Oil  3-4 tbsp
  • Sesame seeds 1 tbsp
  • Coal  1 piece

Method:

  1. First pour oil add ginger garlic paste roast it.
  2. Then add chicken for frying.
  3. Now take a bowl add yogurt, turmeric, oil, chopped fennel, cumin, cloves and green chilies make its paste.
  4. When the chicken is fried, oil starts to comes up then roast it.
  5. Then add mayonnaise and fresh cream roast it for 2 to 3 minutes.
  6. Fold the coal in a foil sprinkle oil.
  7. Delicious mayo chicken is ready.

Ingredients For Pipli Kabab:

  • Beef mince 1/2 kg
  • Garlic paste 1 tbsp
  • Ginger paste 1 tbsp
  • Cumin seeds  1 tbsp
  • Salt  to taste
  • Chili powder 1 tsp
  • Pipli ground 1/2 tsp
  • Kabab cheeni ground 1/2 tsp
  • Green chilies 4-5
  • Coriander leaves 1/4 bunch
  • All spice powder 1 tsp
  • Black pepper powder 1/2 tsp
  • Raw papaya paste 1 tbsp
  • Cinnamon powder  1/4 tsp
  • Black cardamom ground 1/4 tsp
  • Gram flour 2-3 tbsp
  • Oil  2 tbsp
  • Oil  for fry

Method:

  1. First chop the mince, garlic paste, ginger paste, white cumin, salt, chopped red chilies, chopped kabab sugar and green chilies chop it well.
  2. Then add raw papaya, green coriander, chopped garam masala, chopped black pepper, cinnamon and big cardamom.
  3. Add gram flour, when all ingredients are mixed well then take it out in a bowl.
  4. Then give it shape of kabab in hand.
  5. When kabab becomes ready then fry it well.
  6. Add sugar or ketchup then serve.
