Ingredients For Mutton Hyderabadi Biryani:
Mutton 1 kg
Rice 1 kg
Yogurt 1 cup
Hot milk 1 cup
Clarified butter 1 cup
Chopped onion 4
Cloves 4
Lemons 6
Green chilies 6
Black pepper 8
Small cardamom 8
Mint leaves 1 bunch
Yellow food color a pinch
Black cumin 1 tsp
White vinegar 1 tbsp
Red chili powder 1 tbsp
Papaya paste 2 tbsp
Ginger garlic paste 1 1/2 tbsp
Salt to taste
Method:
Take a pan, add mutton, raw papaya, chopped red chilies, ginger garlic paste, lemon juice, small cardamom, mint, green chilies, black pepper and cloves mix it well leave it for half an hour.
Now keep it on low temperature dry its water.
Pour oil on another pan add onions make it golden brown, take it out spread it on a newspaper, along mutton.
Now take another big pan, add black cumin, salt and vinegar boil it 2/4th, change its water.
Then make the rice pan base oily, make half layer of rice, mix oil spread the mutton.
Now put fried onions, after that add lemon juice, put remaining rice.
Now pour milk, pinch of yellow color, add rice.
Along onions, lemon juice and ghee.
Then cover it for 5 to 10 minutes keep its temperature high.
After that keep its temperature low.
When it starts to steam then serve it with ready biryani raita and achar.
Ingredients For Double Roti Kay Kabab:
Bread crumbs 1 packet
Black pepper 1 tsp
Ginger garlic paste 1 tsp
White vinegar 1 tbsp
Soya sauce 2 tbsp
Corn flour 2 tbsp
Oil to fry
Salt to taste
Method:
First take a big bread slice cut its sides and keep it in water make it soft.
Now add mince of mutton, salt and ginger garlic paste cook it and dry its water.
Then put the mince in a chopper, knead it well.
After that add lemon juice, soya sauce, black pepper, green chilies, corn flour, white vinegar, bread crumbs mix it.
Now make small kababs like roll, dip it into egg white and fry it in oil and make it golden brown, spread it on tissue paper, so that it absorbs oil,
Serve it with chili garlic sauce.
Ingredients For Baigan & Paneer Ki Sabzi:
Eggplants 1/2 kg
Lemons 1
Chopped almonds 10
Mint leaves 1/2 bunch
Cottage cheese 1 packet
Cheddar cheese 1/2 packet
Black pepper 1 tsp
Red chili 1 tbsp
Carom seeds 1/2 tsp
Oil to fry
Salt to taste
Method:
First wash the eggplants cut it nicely.
Now pour oil in a frying pan, add eggplant slices make it golden brown.
Then add carom seeds, and chopped red chilies roast it well.
Then add grated cottage cheese, chopped red chilies, carom cheese, chopped black pepper, lemon juice and salt put grated cheddar cheese.
After that heat the oven add ready eggplant bake it for 5 minutes, add mint serve it hot.
