Ingredients For Tamatar Gosht:
Mutton 1/2 kg
Tomatoes 1 kg
Onions 2
Red chili powder 1 tbsp
Turmeric 1 tsp
Ginger garlic paste 1 tbsp
Salt to taste
Green chilies 4
Green coriander 1 bunch
Oil 1 cup
Method:
First wash the mutton and put it into a pan.
Now add onions, turmeric, chopped red chilies, ginger garlic paste, salt and tomatoes.
Pour oil add water let it cook without water.
When the water dries then add green chilies roast it well and remove it from stove.
Sprinkle green coriander and green chilies then serve it hot.
Ingredients For Mutton Pulao:
Mutton 1/2 kg
Rice 2 cups
Chopped onions 3
Ginger garlic paste 1 tbsp
Small cardamom 6
Yogurt 1/2 cup
Salt to taste
Fennel seeds 1 tsp
Big cardamom 4
Black pepper 4
Salt to taste
Onion 2
Garlic 1
Ginger 1 piece
Method:
For chicken stock, pour water, mutton pieces, ginger pieces, garlic, whole onion and salt.
Then add whole coriander, fennel, big cardamom and whole black pepper keep it in a muslin cloth pour water.
When the mutton is tendered then take it out and filter it well.
Now pour oil add chopped onions make it golden brown add onions then spread it.
Add onions, ginger garlic paste, yogurt, small cardamom and green chilies roast it on low temperature.
Then roast it again lightly add stock.
When it starts to smell then take out the rice from water, along salt.
When water dries then put it on simmer.
When it starts to steam then pulao is ready.
Put fried onions while serving.
Ingredients For Mughlai Bhuna Chicken:
Chicken 1 1/2 kg
Yogurt 1 cup
Chopped onion 3
White cumin 1 tbsp
Poppy seeds 1 tbsp
Almonds 8
Small cardamom 8
Black cardamom 6
Big cardamom 3
Qorma masala 1 tbsp
Salt to taste
Khewra few drops
Red chili powder 1 tbsp
Chopped coriander 2 tbsp
Clarified butter 1 cup
Method:
First add white cumin, small cardamom, almonds, raisin, black pepper and big cardamom mix it make it dry.
Now pour ghee and oil add chopped onions make it golden brown take it out.
Then add chicken pieces add salt make it dry.
Now add onions and yogurt blend it in blender.
Dry the chicken water roast it well and add yogurt mixture.
Along chopped red chilies.
When yogurt water dries then add qorma masala, chopped masala and hot water.
When it starts to dry then roast it well, few drops of kewra essence simmer it for 5 minutes.
Delicious mughlai Bhuni chicken is ready.
