Prawn Biryani, Chocolate Truffle Cake And Honey Mustard Chicken Sandwiches by Zarnak Sidhwa

Ingredients For Prawn Biryani:

  • Prawns 1/2 tsp
  • Turmeric powder 1/2 tsp
  • Chili powder 1 tsp
  • Lemon juice  1 tsp
  • Salt  to taste

For Masala:

  • Onion 3
  • Tomato 2
  • Ginger garlic paste 1 1/2 tbsp
  • Green chilies  5-7
  • Turmeric powder 1/4 tsp
  • Yogurt  2 tbsp
  • Garam masala  1 tsp
  • Mint leaves  8-10
  • Coriander leaves 1/2 cup
  • Salt  to taste
  • Oil  2 tbsp

For Rice:

  • Rice 2 cups
  • Cloves 5
  • Cardamom 2
  • Cinnamon sticks 2
  • Bay leaf 1
  • Pepper corns 10
  • Fennel seeds 1/2 tsp
  • Salt to taste
  • Saffron essence 1 tsp

Method:

  1. Clean and wash the prawns.
  2. Marinate the prawns with the ingredients under marinate for at least 1 hour in the refrigerator.
  3. Heat oil and shallow fry the prawns for 4-5 minutes.
  4. Do not overcook, prawns become hard.
  5. Remove and keep aside.
  6. In the same pan, add thinly sliced onion along with salt to left over oil (add more if the raw smell goes.
  7. Add in the yogurt and mix it well.
  8. Add the fried prawns, cover and cook on low.
  9. Add the 1/4 cup chopped coriander leaves, mint leaves and 1 tsp garam masala.
  10. Cover and cook for another 3 minutes.
  11. Remove from fine and keep aside.
  12. Wash the rice, soak for 30 minutes and drain.
  13. Add the whole spices and enough salt to the boiling water.
  14. Add the rice and cook till it is done.
  15. Drain the water immediately.
  16. Spread a layer of rice in the bottom of the vessel and pour prawn masala over the rice.
  17. Now add the rice and repeat the process.
  18. Sprinkle 2 tsp ghee or oil, a pinch of garam masala, chopped coriander leaves and saffron essence on each layer of rice.
  19. The topmost layer should be of rice.
  20. Now cover with the lid and let simmer at very low heat.
  21. Just before serving, garnish with fried onions, cashews and raisins.
  22. Serve with raita, pickle and pappar.

Ingredients For Chocolate Truffle Cake:

For Base:

  • Chocolate biscuit  2 cup
  • Butter melted  1/2 cup

For Filling:

  • Chocolate chopped 11 oz
  • Cream 600 ml
  • Milk  2 tbsp
  • Vanilla essence  1 tsp
  • White chocolate  to decorate

Method:

  1. Mix the biscuit crumbs with melted butter and let set in a pie plate or tin.
  2. For filling melt the chopped chocolate in a bowl set on a pan of simmering and not boiling water.
  3. Cool the chocolate. Beat cream with milk and vanilla essence.
  4. Mix in some chocolate and then slowly all the chocolate in the cream.
  5. Pour chocolate cream over the base and freeze.
  6. Before serving, pipe while chocolate and decorate and serve in slices.

Ingredients For Honey Mustard Chicken Sandwiches:

  • Multi grain bread 8 slices
  • Honey 2 tbsp
  • Mustard sauce 1 1/2 tbsp
  • Chicken  1 cup
  • Mayonnaise  2 tbsp
  • Capsicum 1/4 piece
  • Onion  1
  • Black olives  2-3
  • Salt  to taste  to taste
  • Lettuce leaves  a few

Method:

  1. Mix together mustard sauce, honey and mayonnaise and mix.
  2. Add chicken, capsicum, onion and black olives and mix.
  3. Add salt. Place lettuce over the bread slices and top with the chicken mixture.
  4. Cover each slice with another bread slices and press lightly.
  5. Cut each sandwich into two triangles and serve immediately.
