Ingredients For Fenugreek BBQ Chicken Leaves:

  • Chicken leaves 1/2 kg
  • Ginger paste 1 tbsp
  • Garlic paste 1 tbsp
  • Onion paste 1 tsp
  • Yogurt  2 tbsp
  • Red chili  1/2 tsp
  • All spice powder  1/2 tsp
  • Cumin powder 1/2 tsp
  • Green coriander 1/2 bunch
  • Turmeric 1/2 tsp
  • Carom seeds 1/2 tsp
  • Fenugreek seeds 1 tsp
  • Oil  1 tbsp
  • Salt  to taste

To Garnish:

  • Lemons 3-4
  • Cucumber  2-3
  • Salad leaves  3-4

Method:

  1. Take a mixing bowl add ginger paste, garlic paste and onion paste mix it well.
  2. Marinate it for 1 hour.
  3. Now add yogurt, chopped red chilies, chopped garam masala, chopped cumin, green coriander, chopped turmeric, nutmeg, fenugreek leaves and salt mix it.
  4. Now marinate it and do the coating leave it for 2 hours.
  5. Then put it into bbq sticks.
  6. Now give it steam of coals, bake it in oven or give it steam of coals.
  7. Then garnish it with lemon, cucumber and salad leaves.

Ingredients For Teriyaki BBQ Chicken:

  • Chicken boneless 1/2 kg
  • Green onion 2-3
  • Oil  1-2 tbsp
  • Salad leaves to garnish

For Teriyaki Sauce:

  • Japanese sauce 1/2 cup
  • Orange juice  1/2 cup
  • White vinegar 2 tbsp
  • Lemon juice 2 tbsp
  • Oyster sauce 4 tbsp
  • Brown sugar  2 tbsp
  • White pepper 1/2 tsp
  • Salt  to taste

Method:

  1. For sauce: Take a pan, add japanese sauce, white vinegar, orange juice, wooster sauce, lemon juice, white chilies, brown sugar and salt make it sauce thick.
  2. When the sauce becomes thick then remove it from stove.
  3. For chicken: First add chicken cubes, dip it into ready teriyaki sauce, add green onion then chicken, bake it in oven give it steam on coals.
  4. Put ready sauce on Chicken.
  5. When the chicken becomes ready then brush oil for 2 minutes.
  6. Now dish out it and garnish it with salad leaves then serve.

Ingredients For Hot Chili Spicy Sauce:

  • Talhar Chili paste 1/2 cup
  • Garlic 5-6 cloves
  • Black pepper 1/2 tsp
  • Onion 1
  • Tamarind paste 1/2 cup
  • Oil  1-2 tbsp
  • Salt to taste

Method:

  1. Pour oil in a pan add garlic and onions for frying.
  2. Then add talhar chili paste roast it well.
  3. Now add salt mix it well.
  4. Then add tamarind paste mix it well.
  5. After that make its paste in blender, cook it more for 1 to 2 minutes then remove it from heat.
