Dum Ka Gosht, Jaal Walay Cutlets And Baked Pistachio Custard by Shireen Anwer

Ingredients For Dum Ka Gosht:

  • Mutton  1/2 kg
  • Raw papaya grinded 1 tsp
  • Allspice  1 tsp
  • Coriander powder 1 tsp
  • Chili powder  1 tsp
  • Brown onion  1/2 cup
  • Oil  1/2 cup
  • Lemon juice 2 tbsp
  • Yogurt 1 cup
  • Nutmeg grinded 1/4 tsp
  • Ginger garlic paste 1 tbsp
  • Turmeric  1/4 tsp
  • Cumin seeds 1 tsp
  • Coriander leaves 2 tbsp
  • Mint leaves chopped 1 tbsp
  • Spring onion 1 tbsp
  • Almonds  6
  • Poppy seeds  1 tsp
  • Sesame seeds 1 tsp
  • Desiccated coconut 1 tsp

Method:

  1. First marinate the mutton with yogurt, chopped papaya, garam masala, chopped coriander, chopped red chilies, ginger garlic paste, turmeric, salt, lemon juice and chopped nutmeg mace, cumin, chopped almonds, raisins and sesame seed leave it for 2 hours.
  2. Now pour oil add fried onions and add marinated mutton cook it till becomes soft.
  3. When oil starts to comes up then simmer the coal, then add mint leaves, green coriander and green onion for garnish then serve it hot with naan.

Ingredients For Jaal Waly Cutlets:

  • Mince  1/2 kg
  • Ginger garlic 1 tbsp
  • Chili powder 1tbsp
  • Cumin powder 1 tsp
  • Allspice 1 tsp
  • Salt  1 tsp
  • Green chilies  4
  • Coriander leaves 2 tbsp
  • Onion 2
  • Bread slices 4
  • Eggs  4
  • Bread crumbs  as required

Method:

  1. Take a bowl add mince, chopped red chilies, chopped cumin, garam masala, salt, green chilies, green coriander, chopped mint and water, mix the wet bread slice leave it for marination for 1 hour.
  2. Now sprinkle the bread crumbs on its top.
  3. Then make small balls of mince and give it shape of cutlets.
  4. After that add egg, dip the cutlets into beaten egg and fry them into frying pan.

Ingredients For Baked Pistachio Custard:

  • Pistachio coarsely grinded 1/2 cup
  • Eggs 6
  • Khoya 250 gm
  • Milk 2 cups
  • Sugar 1 cup
  • Ghee  2 tbsp
  • Green color  few drops

Method:

  1. Take a blender add pistachio, egg, khoya, milk, sugar and ghee and few drops of green color blend it for 1 minute.
  2. Now take out the mixture into rectangular pyrex dish, bake it on 180 degree C for 30 minutes.
  3. Serve it hot or cold.
