Nargisi Koftay

Ingredients:

  • Minced meat 1 kg.
  • Chickpeas (grilled and grind) 2 tbsp spoon.
  • White Cumin seeds(grind) 2 tsp spoon.
  • Spices(garam masala pisa hua) 1 tsp.
  • Almond(grind) 2 tea spoon.
  • Coriander leaves (finely chopped) 4 tbsp.
  • Mint (Finely chopped) 2 tbsp.
  • Green Chilies (choppeD0 8-10.
  • Onion 4.
  • Small cardamom(green) 10.
  • Black cardamom 4.
  • Yogurt 1 cup.
  • Ginger(grind) 1 tbsp.
  • Garlic(grind) 1 tbsp.
  • Red chili 2 tbsp.
  • Coriander (grind) 2 tbsp.
  • Salt(as per need).
  • Eggs 6.

Method;

  1. Separate minced into two parts,Add first part in water and boil it.
  2. Mix boiled minced in second part of uncooked minced and grind it properly.
  3. Grind 2 onions and chopped the remaining and fry it.
  4. Mix chickpeas,Cumin seeds,Spices(pisa hua gara masala),green coriander,green chilies and fried onion in mined.
  5. Grind cardamom and 1 eggs in it.
  6. Boil all the remaining eggs.
  7. Make a cover of minced over eggs like kofta and fry it.
  8. Heat oil and add grind onion and grill it for few minutes.
  9. Then add ginger,garlic,red chilies,Coriander (grind) and salt and grill them.
  10. Add Spices (pisa hua garam masala) and fried koftas in spices.
  11. Simmer it for 10-15 minutes.
  12. Take it out in dish sprinkle Spices and almond.

Garlic Bread

Ingredients:

  • Bread  1.
  • Garlic paste 100 grams.
  • Butter 100 grams.
  • Salt (as per taste).
  • Black pepper 1 tea spoon.
  • Oil 6 grams.

Method:

  1. Cut bread into slices but the bottom part should be attached to each slices.
  2. Mix garlic paste,salt and black pepper in a bowl.
  3. Add this mixture on both sides.
  4. Crush butter and sprinkle over it and wrap in foil.
  5. Bake bread at 200 C for 6 minutes.
  6. Uncover the wrap and set aside for five minutes.
  7. Serve warm.

Qandhari Gosht

Ingredients:

  • Mutton 500 grams.
  • Yogurt 1/2 cup.
  • Ginger,garlic (grind) 1 spoon.
  • Turmeric 1 tea spoon.
  • Salt (as per taste).
  • Cloves 4.
  • Cinnamon 1 pieces.
  • Green Chili 4 (finely chopped).
  • Cooking oil 1/2 cup.
  • Pomegranate 2-3 (juice).
  • Onion 3(finely chopped).
  • Red chili (grind) 1/2 spoon.
  • Coriander (grind) 1 spoon.
  • Spices whole(garam masala),black pepper 6.
  • Almond 20 (Boil).
  • Mace 1/2 tea spoon (grind).

Method:

  1. Soak mutton in pomegranate juice for two hours.
  2. Heat oil in pan add whole spices and onion in it,fry it onion until brown.
  3. Remove mutton from pomegranate juice and add in onion.
  4. When water drains from it add turmeric,Red chili ,mace,Coriander,Ginger garlic  and salt.
  5. Add water in it and cook it until soften,add beaten yogurt in it.
  6. Add red chilies in it and grill for five minutes then simmer it.
  7. Add Almond over it and serve warm.
