Chicken Crispers, Chicken Kalya-e-khas And Monkey Bread by Shireen Anwer

Ingredients For Monkey Bread:

  • Flour 3 cups
  • Warm milk  1 cup
  • Milk powder  2 tbsp
  • Warm water 1/2 cup
  • Egg 1
  • Sugar  3 tbsp
  • Oil  1/4 cup
  • Melted butter  1/4 cup
  • Instant yeast 1 1/2 tsp
  • Salt  1/2 tsp
  • Walnuts  1/2 cup
  • Raisins  1/2 cup

For Glazed:

  • Soft butter  6 ounces
  • Brown sugar  6 ounces

For Coating:

  • Fine sugar  1 cup
  • Cinnamon powder  1 tsp

Method:

  1. Take a flour, add dry milk, sugar, yeast and salt filter it well.
  2. Now pour oil add butter and egg mix it.
  3. Then pour milk knead it well for 8 to 10 minutes leave it for 40 minutes, until it becomes double.
  4. Now cut it into small pieces. add sugar and chopped cinnamon.
  5. Now grease the pan, add chopped pieces. Add walnuts and raisins.
  6. Then add butter and brown sugar mixture cook it on 190 degree C for 25 minutes.
  7. For making glazed: mix the butter and brown sugar.

Ingredients For Chicken Kalya-e-khas:

  • Chicken 1kg 16 pieces
  • Onion brown  1/2 cup
  • Green chilies 6 grinded
  • Yogurt 1 cup
  • Chili powder  1 1/2 tsp
  • Lemon juice 2 tbsp
  • Salt 1 1/2 tsp
  • Tomato puree 1/2 cup
  • Almonds grinded 10
  • Desiccated coconut 1 tbsp
  • Ginger garlic 1 tbsp
  • Oil  1/2 cup

Method:

  1. First put green chilies, almonds and khoya in a blender.
  2. Now add chicken pieces add ready masala, fried onions, tomato puree, yogurt, lemon juice, salt and chopped red chilies marinate it well for 1 hour.
  3. Then pour oil add marinated chicken for cooking, until the chicken tenders so that the oil comes up.
  4. Then garnish it with green coriander then serve it with naan.

Ingredients For Chicken Crispers:

  • Chicken mince 1/2 kg
  • Salt 1 tsp
  • Black pepper  1 tsp
  • Mustard  1 tsp
  • Crushed red pepper  1 tsp
  • Rice flour  2 to 3 tbsp
  • Bread slices 2
  • All spices 1 tsp
  • Egg  1
  • Chopped Coriander  2 tbsp
  • Green chilies 4
  • Wooster sauce  1 tbsp
  • Bread crumbs as required
  • Fries  to serve

For Sauce:

  • Potatoes boiled  1 small
  • Mayonnaise half cup
  • Yogurt 3 tbsp
  • Garlic paste 1/2 tsp
  • Green chili 1
  • Salt  1/2 tsp
  • Black pepper 1/2 tsp

Method:

  1. Take a chicken marinate it with salt, black pepper, mustard seeds, chopped red chilies, rice flour, bread slices, garam masala, egg, chopped green coriander, green chilies and wooster sauce, mix it well.
  2. Now give it shape of sausages.
  3. Then sprinkle bread crumbs roll and deep fry it.
  4. After that serve it with fries.
  5. For sauce: take small and boiled potato, mayonnaise, yogurt, garlic paste, green chilies, salt and black pepper blend it well and serve it with crispers.

  • Tried chicken kalya e khas. I just made 1 addition of 1 tsp dhaniya powder to marinade.very nice recipe, must try. Jazak allah
