Ingredients For Tuna Salad:

  • Tuna  1 can
  • Mayonnaise 6 tbsp
  • Parmesan cheese 1 tbsp
  • Jalapeno 1 tbsp
  • Onion 1 small
  • Curry powder 1/4 tsp
  • Parsley 1 tbsp
  • Dill 1 tsp
  • Garlic crushed  1 clove

Method:

  1. In a bowl, stir together the tuna, garlic, mayonnaise, parmesan cheese, jalapeno and onion.
  2. Season with curry powder, parsley, dill.
  3. Mix well and serve as salad or with crackers or on a sandwich.

Ingredients For Fruity Salad:

  • Apples, sliced 2
  • Lemon juice 2 tbsp
  • Cucumber  2
  • Button mushrooms 8 to 10
  • Lettuce  8 leaves
  • Olive oil  1 tbsp
  • Red chili crushed  1/4 tsp
  • Mint leaves  6-8 leaves
  • Coriander  2 tbsp
  • Salt  to taste
  • Carrot  1 medium
  • Tomatoes  2 medium
  • Spring onions  2

Method:

  1. Put half lemon juice on the apples and mix the remaining lemon juice, olive oil, red chili crushed, chopped coriander and mint leaves.
  2. Add salt to taste.
  3. Whisk well. Make a bed of these leaves on the serving dish.
  4. Pour half the dressing.
  5. Combine apples mushrooms, carrot, tomatoes and spring onions. Toss them in the remaining dressing and place it on the lettuce bed serve immediately.

Ingredients For Greek Salad:

  • Iceberg lettuce 1 head
  • Cucumber  1
  • Tomatoes  4
  • Spring onions 8
  • Black olives  10
  • Feta cheese  100 gm
  • White vinegar  3 tbsp
  • Extra virgin olive oil  2 tbsp
  • Salt  to taste
  • Black peppercorns  10-12
  • Crusty bread  to serve

Method:

  1. Place the lettuce, cucumber, tomatoes, spring onions, olives and cheese in a large bowl.
  2. Whisk the vinegar and olive oil together in a small bowl.
  3. Add the salt and freshly ground peppercorns.
  4. Pour the dressing over the salad and loss well to mix.
  5. Serve immediately with crust bread.

Ingredients For Coleslaw:

  • Mayonnaise 1/2 cup
  • Caster sugar 1/3 cup
  • Milk 1/4 cup
  • Lemon juice 2 tbsp
  • Vinegar  1 1/2 tbsp
  • Salt & pepper  to taste
  • Shredded cabbage 2 cups
  • Grated carrots  1/2 cup
  • Onion grated  1 small

Method:

  1. Whisk together mayonnaise, sugar, milk, lemon juice, vinegar and salt, and pepper in a large bowl.
  2. Toss the cabbage, carrots and onion into the dressing, mix well. refrigerate for at least 3 hours before serving.
