Raspberry & Nutella Turnover, Tomato Tarts And Cheesy Pinwheels by Zarnak Sidhwa

Ingredients For Raspberry & Nutella Turnover:

  • Puff pastry 1 packet
  • Nutella spread 6 tbsp
  • Raspberry jam 3 tbsp
  • Egg, beaten 1
  • Confectioners sugar  1/4 cup

Method:

  1. Preheat oven to 200 degrees Centigrade (400 Fahrenheit).
  2. Lightly dust your work surface with flour and then roll out the puff pastry until it is about a centimeter thick.
  3. Using a pizza slicer cut squares approximately 12cm x 12cm.
  4. Does not have to be exact size.
  5. Spread some of the nutella on to one half of each square.
  6. Spread about 1/2 tsp of the raspberry jam over the nutella.
  7. Brush the edges with egg, and fold over the other side to enclose the filling and press the edges firmly to seal.
  8. Use a sharp knife to cut 5 slits across the top of each pastry, and place them on a non stick baking sheet, spacing 2 inches apart.
  9. Brush the surface of the puff pastry with the beaten egg.
  10. Bake for 2-25 minutes in the preheated oven, or until golden brown.
  11. Cool on racks and brush with confectioners, sugar when cooled if desired.

Ingredients For Tomato Tarts:

  • Puff pastry defrosted 1 packet
  • Feta cheese 1 carton
  • Milk  1/4 cup
  • Dried oregano 1/2 tsp
  • Dried basil 1 tsp
  • Egg beaten  1
  • Tomatoes sliced  as required

Method:

  1. Preheat oven to 200 degree Centigrade (400 Fahrenheit)
  2. Take the feta cheese out of the carton, add the 1/4 cup milk, and mash it a little with a fork until it is smooth.
  3. Add the dried herbs, Lightly dust your work surface with flour and then roll out the puff pastry until it is about half a centimeter thick.
  4. Use a square cookie cutter and cut as many squares as will fit, or as many as you need.
  5. Brush the surface of the puff pastry squares with the beaten egg.
  6. Place one tsp of the feta cheese mix in the middle of the puff pastry square, top it with a round of sliced tomato.
  7. Sprinkle some dried basil on top.
  8. Place the tarts on a non stick baking tray, bake for 20-25 minutes or until the pastry is golden and puffy.

Ingredients For Cheesy Pinwheels:

  • Puff pastry  1 packet
  • Pizza sauce paste  6 tbsp
  • Grated cheese  as required
  • Rosemary or thyme to sprinkle
  • Onion finely diced 1
  • Tomato finely diced  1
  • Mushrooms chopped  1/2 cup

Method:

  1. Preheat oven to 200 degrees Centigrade (400 Fahrenheit).
  2. Lightly dust your work surface with flour and then roll out the puff pastry until it is about half a centimeter thick.
  3. Spread pizza sauce paste over the puff pastry.
  4. Divide the tomato, onion, mushrooms and herbs over the pastry and then sprinkle the cheese.
  5. Roll it up to form into a log shape, and cut into pinwheel slices.
  6. Place pinwheels on a non-stick baking tray.
  7. Bake for 20-25 minutes or until the pastry is golden and puffy and the cheese has melted.
