Honey Pineapple Rice, Peshawari Keema And Lobia Ky Koftay by Chef Zakir

Ingredients For Lobia Ky Koftay:

  • White beans boiled 300 gm
  • Gram lentils boiled 125 gm
  • Coriander powder 1 tbsp
  • Cumin powder 1 tbsp
  • Turmeric 1 tsp
  • Allspice 1 tsp
  • Garlic  5 cloves
  • Black pepper 10 pods
  • Salt  to taste
  • Green chilies  5
  • Lemon juice 1 tbsp
  • Ginger garlic paste 1 tbsp
  • Egg  1
  • Corn flour  as required
  • Bay leaves 2
  • Onion 2
  • Chili powder  1 tsp
  • Tomatoes boiled  2
  • Coriander leaves 1/4 bunch
  • Mint leaves 1/4 bunch
  • Oil 1/4 cup
  • Oil For frying

Method:

  1. Take a white beans, chickpea keep it water separately.
  2. Then boil them.
  3. Take a blender add chopped coriander, chopped cumin, turmeric, chopped garam masala and black pepper.
  4. Along boiled beans and lentils.
  5. Then add green coriander, mint, lemon juice, garlic cloves with egg blend it well.
  6. When it is chopped well then take it out in a bowl make its balls.
  7. After that pour oil in a pan.
  8. Now fry the ready balls, coat it with corn flour then fry it and keep it on a side.
  9. Now pour oil add curry leaves and onions make them golden brown.
  10. Then add garlic paste, chopped coriander, chopped cumin, turmeric, chopped garam masala and black pepper, chopped tomatoes, water roast it well.
  11. When oil starts to comes up, its mean lobia koftas are ready to serve.

Ingredients For Honey Pineapple Rice:

  • Rice soaked  100 gm
  • Milk  1/2 liter
  • White butter  3 tbsp
  • Ginger ground  1/4 tsp
  • Egg  2
  • Honey  1/2 cup
  • Pineapple  1 tin

Method:

  1. First take out the egg white, keep it on a side.
  2. Now take a pan, pour milk, wet rice keep it to cook.
  3. Along chopped ginger and white butter.
  4. When they are fully boiled then keep it on a side.
  5. Now add honey mix it and mix it in rice.
  6. Now spread the rice into oven proof dish.
  7. Put chopped pineapple.
  8. Now put egg white beat it and put remaining honey.
  9. When it rises add pineapple spread it on its top.
  10. Now bake it in oven on 180 degree C for 20 to 25 minutes.
  11. Make it golden brown serve it hot.

Ingredients For Peshawari Keema:

  • Mutton mince 1/2 kg
  • Tomatoes  2
  • Onion  2 medium
  • Green chilies  few
  • Coriander leaves a few
  • Oil  1/4 cup
  • Chili powder  1 tsp

Method:

  1. Take a pan pour oil add chopped onions, make them golden brown.
  2. Now add ginger garlic past, whole garam masala, salt and mince, roast it well so that water dries.
  3. Then add tomatoes, green coriander, green chilies, chopped garam masala, chopped red chilies, chopped black pepper and turmeric, roast it well.
  4. Delicious peshawari mince is ready.
