Stylish Chicken Roast, Spicy Gathia Fruit Chaat And Shukrana by Chef Zakir

Ingredients For Stylish Chicken Roast:

  • Chicken 1 whole
  • Ginger garlic paste 2 tbsp
  • Potatoes 2
  • Capsicum 1
  • Onion 1
  • Ginger 1 piece
  • Carrot  1
  • Spring onion 1
  • Honey as required
  • Oregano 1 tsp
  • Cinnamon powder 1/2 tsp
  • Raisins  100 gm
  • Black pepper  as required
  • White pepper  as required
  • Salt  to taste
  • Olive oil  as required

Method:

  1. Take a bowl add chicken give it cuts, add salt, black pepper, white pepper and ginger garlic paste, put it on steam, take it out from steam after 15 minutes.
  2. Then take a bowl add potatoes, capsicum, onion, ginger, carrot, green onion, raisins, chopped cinnamon, salt, black pepper, white pepper and olive oil mix them all.
  3. Now add oregano, olive oil and honey mix it well.
  4. After that put the mixture of vegetables on oven tray, put chicken on its top.
  5. Then bake it for 15 minutes on 220 degree C make it golden brown then serve.

Ingredients For Spicy Gathia Fruit Chaat:

  • Gram flour 250 gm
  • Crushed red pepper 2 tbsp
  • Carom seeds 1/2 tbsp
  • Crushed cumin seeds 1/2 tbsp
  • Oil  for frying
  • Oil  1 cup
  • Salt  to taste

For Fruit Chaat:

  • Apple 1
  • Banana 2
  • Sapodilla 2
  • Pear  1
  • Guava 2
  • Melon 1
  • Peach  2
  • Grapes 1 bunch
  • Chaat masala as required
  • Cumin seeds crushed 1 tbsp
  • Salt  to taste

Method:

  1. For making gathia: take a flour, gram flour, chopped red chilies, nutmeg, chopped cumin and salt.
  2. Now pour oil add water, knead it with normal water.
  3. After that put this on filter, give it shape of gathia fry it in hot oil.
  4. For making fruit chaat, add apple, banana, sapodilla, pear, guava, peach, melon grapes, and salt, chaat masala and chopped cumin mix it well.
  5. Serve it by mixing gathia.

Ingredients For Shukrana:

  • Rice 250 gm
  • Yellow lentils 250 gm
  • Caster sugar 250 gm
  • Almond ground 50 gm
  • Pistachio ground 50 gm
  • Fresh cream 200 gm
  • White butter 100 gm
  • Red syrup  as required

Method:

  1. First boil the rice, chop it nicely and keep it on a side, put boiled lentils, keep it on a side.
  2. Take a bowl add white butter, fresh cream and sugar, mix it well, so that cream becomes thick, keep it in fridge.
  3. Make the dish oily and make layer of rice. Then sprinkle sugar.
  4. Then add almonds and pistachio sprinkle it, then spread fresh cream mixture.
  5. Now spread chopped lentil, sprinkle caster sugar, sprinkle remaining almond & pistachio and spread cream mixture nicely..
  6. Now make peppercorn and make lines with red syrup on it. Now sprinkle remaining sugar. Now make mark on red syrup line with the help of toothpick and make design.
  7. Tasty shukrana is ready.
