Tum Yum Pizza, Velvet Fish And Sea Food Boat by Chef Gulzar

Ingredients For Tum Yum Pizza:

For Dough:

  • White Flour 300 gm
  • Yeast 1 -1 1/2 tsp
  • Sugar 1 tsp
  • Baking powder 1 tsp
  • Salt  to taste

For Marinating:

  • Prawns  400 gm
  • Ginger garlic paste  1 tbsp
  • Red chili powder 1 tbsp
  • Turmeric powder 1/2 tsp
  • All spice powder 1/2 tsp
  • Corn flour 2 tbsp
  • Eggs 2 to 3
  • Food color 1 pinch
  • Oil  for fry
  • Salt  to taste

For Pizza Topping:

  • For pizza sauce 1/2 cup
  • Tum yum paste 3 tbsp
  • Sliced mushroom 1/2 cup
  • Sliced olives  1/2 cup
  • Mozzarella cheese 400 gm
  • Oregano  1/2 tsp
  • Lemon grass 1-2 sticks
  • Butter  3 to 4

Method:

For making dough:

  1. Take a warm water, add yeast and sugar mix it and leave it for 15 minutes.
  2. Add gram flour, salt, baking powder and yeast, knead it well and leave it near hot place.
  3. Add yeast knead it. leave it for 3 to 4 hour.
  4. Then take it out fold it, dough is ready.

For making prawns:

  1. Take a mixing bowl, add egg white, corn flour, ginger garlic paste, chopped red chilies, chopped turmeric, chopped garam masala, pinch of yellow color and salt mix it well make its batter.
  2. Now marinate the prawns with batter, leave it for half an hour.
  3. Then pour oil fry the prawns, take it out on tissue paper, so that oil absorbs.
  4. For Topping, tum yum paste, water, pizza sauce stir fry it well.
  5. Now grease the oven tray with butter.
  6. Roll out the pizza roti, press it on tray.
  7. Now pour tum yum paste on pizza bread, sprinkle prawns.
  8. After that put mushroom slices and grated mozzarella cheese set it well.
  9. Sprinkle oregano, olive oil slices press it on its top.
  10. Now place the oven into preheated oven on 200 degree C, bake it for 18 to 20 minutes.
  11. Then take it out cut the slices then serve it well.

Ingredients For Velvet Fish:

  • Fish 500 gm
  • Ginger garlic paste 1 tbsp
  • Gram flour 1/2 cup
  • Boiled yellow lentil 50 gm
  • Boiled chick peas 50 gm
  • Cumin powder 1/2 tsp
  • Coriander powder 1/2 tsp
  • Brown onion 1/2 tsp
  • Yogurt 1 cup
  • Red chili 1/2 tsp
  • White pepper 1/2 tsp
  • All spice powder 1/2 tsp
  • Turmeric powder 1/2 tsp
  • Nutmeg 1/3 tsp
  • Cinnamon powder 1/3 tsp
  • Cream 2-3 tbsp
  • Sugar 1/2 tsp
  • Oil 2-3 tbsp
  • Green coriander little
  • Salt  to taste

Method:

  1. Paste salt, ginger garlic paste on fish.
  2. Now take a flour, red chilies, turmeric and water make its batter thick.
  3. Then coat the fish into gram flour, fry it well and keep it on a side.
  4. After that put brown onion, chopped cinnamon, chopped nutmeg, yogurt, chopped white pepper, chopped garam masala, chopped cumin, chopped coriander, chopped turmeric, salt and sugar blend it well make its paste.
  5. Now pour oil add ginger garlic paste fry it well.
  6. Then add boiled moong daal, boiled chickpea and yogurt paste roast it well pour water make its gravy thick.
  7. Now add fish.
  8. Add cream or green coriander for garnish then serve.

Ingredients For Sea Food Boat:

  • Bun 4
  • Fish 200 gm
  • Garlic paste 1 tsp
  • Black pepper 1/2 tsp
  • Lemon juice 1 tsp
  • Mozzarella cheese 1/2 cup
  • Chopped capsicum 1
  • Chopped tomato 1
  • Black pepper 1 tsp
  • Oregano 1 pinch
  • Pizza sauce 1/2 cup
  • Olives 1/2 cup
  • Mushroom 1/2 cup
  • Oil  as required
  • Salt  to taste

Method:

  1. Take a mixing bowl add fish, garlic paste, chopped black pepper, lemon juice and salt mix it well.
  2. Now fry it or grill, take it out and keep it on aside.
  3. Then take big bun, give it cut.
  4. Take a mixing bowl add fish, chopped tomatoes, black pepper and salt mix it well.
  5. Now pour sauce on pan, do the stiffing.
  6. Then sprinkle grated mozzarella cheese and oregano.
  7. Place it in oven on 200 degree C for 10 to 15 minutes take it out then serve.
