Ingredients For Green Masalay Kay Chops:
Mutton chops 1/2 kg
Green coriander 1 bunch
Yogurt 1 cup
Oil 1 cup
Chopped onion 2
Lemon juice 3
Garlic cloves 6
Green chilies 10
Black pepper 1 tsp
Ginger garlic paste 1 tbsp
Salt to taste
Method:
First wash the mutton chops and put them into a pan.
Now add salt, ginger garlic paste and yogurt mix it well and boil it.
When water dries then remove it from stove.
Then add green chilies, garlic cloves, green coriander, chop the chutney.
Then pour oil in a pan add chopped onions, make it golden brown take it out half and spread on a tissue paper.
Put half onions, fry them lightly add lemon juice and salt.
Then take a frying pan pour oil add boiled mutton chops, fry them lightly mix it in ready masala.
After all the chops are fried then add lemon juice and chopped black pepper simmer it on 5 minutes.
Sprinkle fried onions on its top serve the haray masalay kay chops.
Ingredients For Matar Pulao:
Rice 2 1/2 cup
Chopped onion 4
Green chilies 4
Small cardamom 6
Oil 1 cup
Peas 2 cups
Yogurt 1/2 cup
Black cumin 1 tsp
Ginger garlic paste 1 tbsp
Butter 1 tbsp
Salt to taste
For Stock:
Ginger 1 piece
Onions 2
Garlic 2
All spices as required
Salt to taste
Water 2-3 glasses
Fennel seeds 1 tsp
Coriander seeds 1 tbsp
Method:
First wash the rice and keep it in water.
Now pour oil add chopped onions make it golden brown, take it out on tissue paper.
Add remaining onion, yogurt, ginger garlic paste, chopped small cardamom, black cumin, green chilies and pealed peas roast it and add stock.
When the stock is boiled then take out the water from rice, add stock, salt and green chilies.
After that cover the pan when the water dries, simmer it add butter.
Add fried onions then serve.
For making stock add ginger, onion, garlic cloves, garam masala, salt, fennel and whole coriander filter the water.
Ingredients For Anday Kay Cutlets:
Boiled eggs 6
Potatoes 3
Bread crumbs 2 cups
Chaat masala 1 tsp
Black pepper 1/2 tbsp
Green coriander 1 white
Egg white 3
Oil to fry
Salt to taste
Method:
First add boiled potatoes , mash them well.
Now mix salt, and chopped black pepper in mashed potatoes.
Then cut the boiled eggs in long slices.
After that take a mashed potato put egg in its center, make its cutlets.
Then dip it into egg white, paste bread crumbs.
When the sauce becomes ready then keep its temperature low and make it golden brown, spread it on tissue paper, so that it absorbs.
Sprinkle green coriander and chaat masala then serve.
