Mutton Green Handi Ingredients: Mutton 1 kg(small pieces). Green Coriander leaves 1/2 cup (chopped). Green onion 1/2 cup (chopped). Green chilies whole 4. Turmeric powder 1/2 tea spoon. Oil as per need(for frying). Salt as per taste. Brown onion 1 cup. Mint leaves 1/2 cup. Dry coriander powder 1/2 tea spoon Ginger garlic paste 2 spoon. Yogurt 1 cup. Directions: Wash mutton first then clean it. Mix salt and black pepper in and cook it,don't add water and cook it at low flame. When mutton's water drains then remove from the stove. Put mutton into sand's pot(handi). Add brown onion,green chilies,green coriander leaves,mint,green onion and yogurt in blender and blend it nicely. Add this mixture into mutton's pot add ginger garlic paste,turmeric powder,dry coriander and oil as well and mix it properly. Marinate it for half hour. After that cook it at medium flame. When mutton soften then grill it. Add green chilies whole and simmer it for 2 minutes. Serve it in serving dish,Serve warm. Beef Kenaluni Ingredients: Minced beef 1 kg. Onion 1 (chopped). Garlic cloves 4 (ground). Passata jug or jars with basil 660g each. Pinch of caster sugar. Tubes cannelloni (dried) 400 grams. Butter 50 grams. Flour (plain) 50 grams. Milk 600 ml. Cheese soft along with garlic and some herbs 140 grams Parmesan (grated) 140 grams. Directions: Fry beef first in non-sticky cooking pan (fry would be dry),fry it at medium-high flame. Use wooden spoon for breaking up for 10 minutes or breaking up until brown. When browned remove from stove and set aside for cool. Cook onion in oil for five minutes or until soften. Now add garlic in it and heat for 1 minute more. Tip beef in jars or jug of passata sauce and sugar as well. Heat for 20 minutes more. Take small pan add butter in it and heat it. When foaming mix in flour about 1 minute. Mix milk in it and mix properly to get without lump sauce. When bubble comes in it during stir,Remove from the stove . Add cheese int it and mix it properly or mix it until dissolve completely. Then cover it with cling film. Now make a base of tomato sauce in 2-3 baking dishes or oven proof dishes or foil containers. Put tea spoon of beef in cannelloni tubes over the sauce. Then pour white sauce drizzle Parmesan over it. If you want to freeze this then cool up this and wrapped cling film over it and freeze in deep freezer. If you want to eat then heat the oven at 200C/180C and heat it for 40-45 minutes or heat it until paste tender and topping golden Your beef Kenaluni is ready. Baked Cherry Cheese Cake Ingredients: Digestive biscuits (crushed) 12. butter (melted) 50 grams. Sugar (caster) 100 grams. Soft Cheese 300 grams. Eggs 2. Pie filling cherry either red or black. Directions: First of all pre-heat oven at 180C. Add the biscuits,melted butter and sugar,mix them properly and make base of it and sides would be 20 cm. Now blend Cheese,eggs and sugar using blender,blend it until soft and fluffy. Put into case and heat it for half hour or until set. Now set aside for half hour. Add cherry pie over it. Serve chilled.
