Yellow Cake With Frosting, Fried Chicken Strips And Pina Colada On A Stick by Zarnak Sidhwa

Ingredients For Yellow Cake With Frosting:

For Cake:

• Flour 2 cups
  
• Sugar 1 cup
  
• Sugar 1/4 cup
  
• Baking powder 1 tbsp
  
• Salt 1 tsp
  
• Butter 1/2 cup
  
• Milk 1 cup
  
• Vanilla essence 1 tsp
  
• Eggs  2

For Cream Cheese Frosting:

• Cream cheese 8 ounces
  
• Unsalted butter 8 tbsp
  
• Vanilla essence 1 tsp
  
• Icing sugar  1 cup

For Cream Frosting:

• Cream 1 cup
  
• Vanilla essence 1/2 tsp
  
• Sugar  1 tbsp
  

Method:

1. Sift together flour, sugar, baking powder and salt.
2. Add butter, milk and vanilla.
3. Add eggs, beat. Pour batter into 2 greased and floured 8 inch cake pans, dividing equally among both.
4. Bake at 180 degrees C for 30 to 35 minutes or until toothpick comes out clean.
5. Cool in pans on wire racks.
6. Turn out and cool thoroughly on wire racks.
7. Frost with cream cheese or whipped cream frosting.
8. For the cream cheese frosting, beat cream cheese until light and fluffy, gradually beating in the butter until light and fluffy.
9. Beat in vanilla.
10. Add icing sugar and beat until well blanched and fluffy.
11. Add more icing sugar if needed to get it to the right spreading consistency.
12. For the cream frosting, combine all ingredients in a bowl, cover and chill, beat until stiff peaks form.

Ingredients For Fried Chicken Strips:

• Chicken boneless 1 kg
• Eggs 2
• Evaporated milk 1 can
• Salt 2 tsp
• Black pepper 2 tsp
• Garlic chopped 2 tsp
• Onion chopped 2 tsp
• Flour  2 1/2 cups
• Oil  For Frying

Method:

1. Mix together the eggs and milk.
2. Add half the salt, pepper, garlic chopped, and onion chopped or grated.
3. Set aside. Sprinkle a dash of the remaining salt, pepper, garlic and onion onto both sides of the chicken pieces.
4. Heat the oil.
5. Dip the chicken strips into the egg/ milk mixture then coat with flour and deep fry.
   

Ingredients For Pina Colada on A stick:

• Pineapple chunks 1 can
  
• Coconut cream 1 can
  
• Banana 1
  
• Vanilla essence  1/2 tsp

Method:

1. Blend all ingredients Well, freeze in possible moulds and enjoy.
