Mutton Nihari, Boti Kabab And Masala Bheja by Chef Zakir

Ingredients For Mutton Nihari:

  • Mutton Bong 1/2 kg
  • Onions 2
  • Clarified butter  1 cup
  • Muslin cloth  1 piece
  • Water  2 glasses
  • Red wheat flour 1/2 cup
  • All spice powder  1 tbsp
  • Ginger garlic paste 2 tbsp
  • Fennel seeds 2 tbsp
  • Dry ginger 2 tbsp
  • Red chili powder 3 tbsp
  • Salt  to taste

Method:

  1. Pour ghee add chopped onions and mutton bong roast it well, make the onions soft.
  2. Along fennel and sonth, put it on muslin cloth, make a bag and add ginger garlic paste and add red chopped chilies.
  3. Then add water after roasting, cover and let it be on simmer.
  4. When the mutton is tendered then add red flour make it thick.
  5. When it looks like nihari then add garam masala in water then simmer it for 5 to 10 minutes.
  6. Delicious nihari is ready.

Ingredients For Boti Kebab:

  • Beef undercut 1/2 kg
  • Ginger garlic paste 2 tbsp
  • Coriander chopped 1/4 bunch
  • Lemon juice 2 tbsp
  • Yogurt 250 gm
  • Turmeric  1 tsp
  • Salt  to taste
  • Ground coriander 1 tsp
  • Red chili flakes 1 tsp
  • All spice powder 1 tsp
  • Papaya paste 3 tbsp
  • Skewers Sticks as required
  • Oil 2-3 tbsp
  • Tamarind paste 2 tbsp

Method:

  1. First cut the undercut into square pieces make its small pieces.
  2. Now add yogurt, drain its water from yogurt, ginger garlic paste, turmeric, salt, chopped coriander, chopped red chilies, garam masala, tamarind paste and lemon juice mix it and keep it on a side.
  3. Now pour salt, add lemon juice and keep it on side.
  4. Now add salt and papaya paste for marination.
  5. Add yogurt mixture for marination for 8 to 10 minutes.
  6. Along green coriander.
  7. Then put the pieces into skewers.
  8. Now on the grill pan pour oil slightly, give it steam make the piece golden, take it out and serve it with chutney.

Ingredients For Masala Bheja:

  • Mutton brain 2
  • Chili powder 1 tsp
  • Coriander leaves 1/4 bunch
  • Green chilies chopped 2
  • Coriander powder 1 tsp
  • Turmeric 1/2 tsp
  • Turmeric  1/2 tbsp
  • Onion chopped 1 medium
  • Oil 3-4 tbsp
  • Ginger garlic paste 1 tbsp
  • Ginger 1
  • Coriander leaves as required
  • Boiled tomatoes 2
  • Yogurt  3-4 tbsp
  • Salt  to taste

Method:

  1. First pour water, add turmeric and boil it.
  2. When they are boiled nicely then take it out and wash it and keep it on aside.
  3. Now pour oil add ginger garlic paste cook it well.
  4. Then add boiled tomatoes, chopped red chilies, chopped coriander, turmeric and chopped onions cook it for 2 to 3 minutes.
  5. Then add turmeric, green chilies and chopped green coriander cook it more for 2 to 3 minutes.
  6. Then mix the boiled brain, make its pieces, take it out on platter, sprinkle ginger garlic then serve.
