Ingredients For Nali Pulao:
Mutton 750 gm
Bone narrot boiled 2
Rice 1/2 kg
Onion 2
Green chilies 2 to 3
Ginger garlic paste 2 tbsp
Yogurt 1 cup
Bay leaves 2 to 3
Cloves 4 to 5
Pulao Masala 2tbsp
Clarified butter 1/2 cup
Salt to taste
Method:
Take a pan, pour oil add onions make it brown and keep it on a side.
Now add ghee, curry leaves, cloves make it crispy.
Now add ginger garlic paste roast it well.
Then pour oil cook it well tender the mutton.
When nali ghost is tendered then filter the stock.
Now add ghee, add fried onions and ginger garlic paste.
Then add roasted mutton and yogurt add masala pulao.
Then add stock. boil it in pulao masala. Then add stock.
When the stock is boiled then add rice and cook it.
After that add boiled nali, simmer it.
When the simmer is done then take it out add fried onions for garnish .
Nali pulao is ready.
Ingredients For Gulzar Special Pulao Masala:
Black pepper 2 tbsp
Nutmeg 1/2 tsp
Mace 1/2 tsp
Aniseed 2 tbsp
Cinnamon 3 sticks
Small cardamom 10
Black cumin 2 tbsp
Method:
Grind all the ingredients above in a grinder.
This masala is for only 2 kg.
Ingredients For Khopra Halwa:
Milk 1 kg
Khoya 1/2 kg
Semolina 1/2 cup
Grated coconut 2 cup
Sugar 250 gm
Cardamom powder 1 tsp
Green food color 1 tsp
Kewra essence few drops
Method:
Take a pan, add semolina roast it well.
Then add milk, chopped cardamom and sugar mix it well.
Take a pan, add green cloves, mix it well, put it into milk pan.
Now add khoya mix it well stir it continuously.
Then add chopped khopra mix it well and stir it continuously.
Now add roasted semolina cook it well so that the mixture becomes thick.
Then take it out in mould.
Decorate it with coconut.
Khopra halwa is ready.
