Kaleji Tikka, Bhindi Gosht And Biscuit Tempura by Chef Zakir

Ingredients For Kaleji Tikka:

  • Mutton liver 1/2 kg
  • Ginger garlic paste 1 tbsp
  • Salt to taste
  • Chili powder 1 tsp
  • Crushed red pepper 1 tsp
  • Turmeric 1/2 tsp
  • Lemon juice  1 tbsp
  • Thick yogurt 125 gm
  • Cumin powder 1/2 tsp
  • Oil  2 tbsp
  • Coal  as required

Method:

  1. First make small pieces of mutton liver.
  2. Take a bowl add liver, ginger garlic paste, take out water from yogurt, lemon juice, salt, chopped red chilies, turmeric and chopped cumin mix it well.
  3. Then pour oil.
  4. Now put them into skewers and give it steam of coals from all four sides.
  5. Take it out and serve it hot.

Ingredients For Bhindi Gosht:

  • Mutton 1/2 kg
  • Ladyfinger 1/2 kg
  • Onion  3
  • Ginger  1 piece
  • Garlic 6-7 cloves
  • Oil  1/4 cup
  • Whole spices  as required
  • Turmeric 1 tsp
  • Chili powder 1 tbsp
  • Coriander powder 1 tbsp
  • Water  1-1 1/2 cup
  • Salt to taste
  • Yogurt 125 gm
  • All spice  1 tsp

Method:

  1. First cut both ends of ladyfinger pour oil stir fry it on low temperature and keep it on a side.
  2. Now add onion, ginger, garlic and water in a blender make its paste.
  3. Then pour oil add garam masala and ginger garlic paste, cook it for 4 to 5 minutes.
  4. Then add turmeric, chopped red chilies, chopped coriander and mutton.
  5. Along water.
  6. Now cover and let it cook for 20 to 25 minutes.
  7. Then add salt and beaten yogurt, fry the ladyfinger mix them all and simmer it for 4 to 5 minutes.
  8. When oil starts to comes up then sprinkle garam masala then serve.

Ingredients For Biscuits Tempura:

For Batter:

  • Eggs 3
  • Plain flour 1 cup
  • Corn flour 1 cup
  • Dry flour  1 cup
  • Black pepper powder 1/2 tsp
  • White pepper powder 1/2 tsp
  • Oil  for frying
  • Salt to taste
  • Sooper biscuit  1 packet

Method:

  1. Take a bowl add flour, corn flour, egg, chopped black pepper, chopped white pepper and salt make its batter.
  2. Take a pan deep fry it in hot oil.
  3. When oil starts to comes up then coat it with dry flour, dip it into batter, again coat it with dry flour.
  4. After that one by one dip it into batter and fry till becomes golden brown.
  5. Delicious biscuit tempura is ready.
