Ingredients For Shab Daig:
Mutton 1 kg
Turnip 1/2 kg
Beef mince 1/2 kg
Yogurt 1 cup
Oil 1 cup
Tomato 3
Chopped onion 3
lemons 3
Green chilies 4
Carrots 4
Green coriander as required
Turmeric 1 tsp
White cumin 1 tsp
Sugar 1 tsp
Red chili powder 1 tbsp
Chick pea 1 tbsp
All spice powder 2 tsp
Ginger garlic paste 2 tbsp
Coriander powder tbsp
Salt to taste
Method:
First peel the skin of turnip and carrot make its four pieces.
Now wash the mutton, along green coriander and green chilies.
After that pour oil, mutton, onion, turmeric, chopped red chilies, chopped coriander, ginger garlic paste, pour water so that the mutton is tendered.
Keep its temperature low and tender the mutton turn its stove.
Then add roasted chickpea and cumin mix it in mince.
Along chopped garam masala mix it mince and make its small kofta, fry them lightly.
After that fry the turnip and carrot.
Now add yogurt, sugar and tomatoes roast it lightly.
Then make koftas, carrot, turnip pour water and simmer it on low temperature.
When the oil starts to comes up then add green masala, chopped garam masala and lemon juice simmer it more for 5 minutes, serve it hot with naan.
Ingredients For Paye:
Mutton trotters 12
Green coriander 1 bunch
Yogurt 1 cup
Small onions 2
Lemons 3
Green chilies 4
Turmeric 1 tsp
All spice powder 1 tsp
Cumin powder 1 tsp
Red chili powder 1 tbsp
Ginger garlic paste 1 tbsp
Coriander powder 2 tbsp
Oil as required
Chopped ginger as required
Salt to taste
To Wash Trotters:
Flour 1/2 cup
To Cook Trotters:
Garlic 2 clove
Water 4-5 glass
Fennel seeds 1 tsp
Coriander seeds 1 tbsp
Salt to taste
Method:
First wash the mutton trotter, paste flour and leave it for half an hour.
Then wash it with hot water.
Now keep the washed trotter, add water, fennel, whole coriander, whole garlic and salt keep it cooking.
When it is tendered then take out big bones and filter the stock.
Pour oil add onions make them golden brown spread it on tissue paper, so that it becomes crispy.
Then make small pieces of onions with hands, add turmeric, ginger garlic paste, chopped coriander, roasted and chopped cumin, chopped red chilies in a pan, roast it lightly.
Now roast it for 5 to 8 minutes, filtered stock and garam masala cook it on low temperature.
When the thickness comes up then add garam masala, lemon juice, chopped green chilies, chopped green coriander and ginger simmer it well.
Serve it hot.
Ingredients For Dum Ki Boti:
Beef pieces 1/2 kg
Lemon 2
Green chilies 2
Black pepper 4
Yogurt 1/2 cup
Mint leaves 1/2 bunch
Bihari masala 2 tbsp
Oil 3 tbsp
Method:
First add beef pieces, black pepper, yogurt and bihari masala and leave it for 10 minutes.
Now spread it on frying pan and dry its water.
When water dries then pour oil and lemon juice cover and leave it to simmer on low temperature.
Add chopped green chilies, chopped mint, onion serve it hot with paratha.
