Keema Biryani, Chana Mutton And Caramel Banana by Zarnak Sidhwa

Ingredients For Chana Mutton:

  • Channa daal 2 cups
  • Mutton  1/2 kg
  • Onion sliced 1
  • Tomatoes sliced 2
  • Ginger julienne 2 tbsp
  • Ginger garlic paste 2 tbsp
  • Oil  2 tbsp
  • Cinnamon  1 piece
  • Green chilies 6-8
  • Salt to taste
  • Red chili powder 1 tbsp
  • Turmeric 1 tsp
  • Chaat masala 1 tsp
  • Garam masala 1 tsp
  • Peppercorns few
  • Water  2 cups
  • Lemon juice 2 tbsp
  • Fenugreek leaves  1 tbsp

Ingredients For Keema Biryani:

  • Mutton 500 gm
  • Basmati rice 2 1/2 cup
  • Cloves  5-6
  • Cinnamon stick 1 inch piece
  • Star anise  1
  • Black cardamoms 2-3
  • Green cardamoms 4-5
  • Bay leaves  2
  • Black pepper 5-6
  • Caraway seeds 1 tsp
  • Ghee  3 tbsp
  • Salt to taste
  • Oil 3 tbsp
  • Ginger 1 tbsp
  • Garlic 1 tbsp
  • Red chili powder  1 tbsp
  • Dill 2-3 tbsp
  • Fenugreek leaves 1 cup
  • Fried onions 1 cup
  • Garam masala 2 1/2 tsp
  • Yogurt 1 cup
  • Ghee  2 tbsp
  • Green chilies  4-5
  • Ginger  1 inch piece
  • Mint leaves 45
  • Eggs boiled 2

Method:

  1. Heat water in a pan.
  2. Add cloves, cinnamon, bay leaves, black peppercorns and caraway seeds.
  3. Add 1 tbsp ghee and salt and mix.
  4. Darin and add the rice and mix well.
  5. Let the rice cook.
  6. Heat 3 tbsp oil in another pan.
  7. Add ginger and garlic and saute till fragrant.
  8. Add mince and saute and add 1 cup water and mix well.
  9. Add red chili powder, turmeric powder and salt and mix.
  10. Chop dill and fenugreek leaves, and add to the pan.
  11. Add half the fried onions, 1 tsp garam masala powder, yogurt, tbsp ghee, green chilies, ginger strips and half chopped mint leaves.
  12. Strain the cooked rice and arrange half of it in a layer over the keema mixture.
  13. Sprinkle1 tsp garam masala powder, remaining fried onion, more mint leaves and arrange the egg slices on these.
  14. Put the remaining rice over it.
  15. Sprinkle 1/2 tsp garam masala powder and remaining mint leaves.
  16. Drizzle 1 tbsp ghee all around.
  17. Cover and cook on dum for 6-8 minutes.
  18. Serve hot.

  • Butter 1/2 cup
  • Caster sugar 1 cup
  • Cream  1 1/4 cup
  • Bananas  4
