Hot N Sour Beef, Dry Mutton Chops And Mutton Aloo Bukhara Pulao by Chef Zakir

Ingredients For Hot & Sour Roast Beef:

  • Beef undercut 1 kg
  • Dry red chilies 8-10
  • Garlic 4-5 cloves
  • Ginger 1 piece
  • Soya sauce 1/4 cup
  • Salt  to taste
  • Black pepper powder  1/2 tsp
  • Water  2 glasses

For Dressing:

  • Lemon juice 2 tbsp
  • Red capsicum 1
  • Green capsicum 1
  • Sugar  1 tbsp
  • Cabbage 1/4 piece
  • Corn flour  1 to 1 1/2 tbsp
  • Salad leaves  few
  • Salt n pepper  to taste

Method:

  1. First take a pan add ginger, garlic, soya sauce, chopped black pepper and salt, red chilies and beef undercut cover and let it leave to simmer and cook.
  2. Remove its cover for 15 to 20 minutes take out the undercut, place it on oven tray bake it on 200 degree C, bake it for 10 to 15 minutes.
  3. Then put the remaining syrup into juicer blender.
  4. When it is nicely chopped then add red capsicum, green capsicum chop it well.
  5. Now take it out and cook it well.
  6. Then add salt, black pepper and sugar cook it well make the corn flour thick.
  7. When the sauce is cooked well then turn off the stove and keep it on a side.
  8. Now decorate the cabbage on platter, put salad leaves on it.
  9. Now put the ready sauce on its top then serve.
  10. Delicious hot and sour roast beef is ready.

Ingredients For Mutton Aloo Bukhara Pulao:

  • Mutton boneless 1/2 kg
  • Rice 300 gm
  • Plum  50 gm
  • Mix whole spices as required
  • Yogurt 250 gm
  • Onion 2
  • Green chilies  2-3
  • Green garlic paste
  • Salt 2 tbsp
  • Ghee  to taste
  • Water 1 1/4 - 1 1/2 glass
  • Kewra  2 tbsp
  • Yellow color  a pinch

Method:

  1. First take a pan, pour ghee, add ginger garlic paste, garam masala, green chilies and mutton pour water and let it cook.
  2. When the mutton is tendered then separate the mutton and stock.
  3. Now pour water add salt and rice boil it well. Take the 1/4 the rice.
  4. Then take a pan make layer of mutton, pour yogurt and plum make layer of rice.
  5. Now put remaining stock and put stock on rice.
  6. Sprinkle pinch of yellow color, kewra and simmer it for 8 to 10 minutes.

Ingredients For Dry Mutton Chops:

  • Mutton chops 1/2 kg
  • Yogurt 250 gm
  • Ghee 1/4 cup
  • Cumin powder 1 tbsp
  • All spice powder 1 tbsp
  • Turmeric powder 1 tbsp
  • Chili powder 2 tbsp
  • Ginger garlic paste 2 tbsp
  • Salt  to taste

Method:

  1. Take a bowl add ghee and ginger garlic paste leave it to cook.
  2. Then add mutton chops, yogurt, chopped cumin, chopped garam masala, chopped turmeric, chopped red chilies and salt cover and let it cook for 15 to 20 minutes.
  3. When the mutton chops are tendered then keep its temperature high and dry its water.
  4. Now heat the grill pan pour oil add chops on grill pan for 10 to 15 minutes.
  5. Delicious soft grill mutton chops is ready.
