Haleem, White Mutton Karahi And Coconut & Sooji Ka Halwa by Zubaida Tariq

Ingredients For Haleem:

  • Wheat 1/2 kg
  • Meat 1 kg
  • Boiled gram lentil 1 cup
  • Clarified butter 1 cup
  • Onion 3
  • All spice powder 1 tsp
  • Turmeric  1 tsp
  • Red chili powder 1 tbsp
  • Soda Bi carbonate 1/2 tsp
  • Coriander powder 1 1/2 tbsp
  • Ginger garlic paste 2 tbsp
  • Salt to taste

For Masala And Bhagar:

  • Chopped mint leaves 1 bunch
  • Chopped coriander  1 bunch

Method:

  1. First add mutton, pour ghee or oil add ginger garlic paste, chopped garam masala, chopped red chilies, chopped onions, turmeric, chopped coriander and salt cook it on low temperature.
  2. Now add chopped wheat boil it with water.
  3. Stir it continuously.
  4. Add soda carbonate when its color changes.
  5. When it is tendered well then cook it on low temperature.
  6. When the wheat and mutton are mixed well then add boiled and chopped chickpea, mix it with water and put it on simmer.
  7. Then mix chopped mint, chopped green coriander, chopped green chilies, chopped ginger garlic and chopped garam masala.
  8. After that pour oil or ghee in small pan add chopped onions make it golden brown spread it on paper.
  9. Add lemon, fried onions and hot oil serve it hot.

Ingredients For Coconut & Sooji Ka Halwa:

  • Semolina 250 gm
  • Raisins 1/2 cup
  • Coconut 1 cup
  • Fresh milk 1 cup
  • Small cardamom 4
  • Sugar 1 tsp
  • Cloves  4
  • Almonds 15
  • Clarified butter  2 tbsp

Method:

  1. First add chopped cardamom, sugar.
  2. Now take a pan add ghee and cardamom and cloves roast it well.
  3. Then add sugar cook it well, when the sugar is saturated then pour fresh milk and raisins.
  4. After that make the pan oily and spread the halwa.
  5. Add chopped almond in pan.
  6. Put chopped coconut and fried almonds then serve it hot.

Ingredients For White Mutton Karahi:

  • Mutton 1/2 kg
  • Yogurt 1 cup
  • Green chilies 4
  • Almond 12
  • Oil 1 cup
  • Fresh milk 1/2 cup
  • Fresh cream  1/2 cup
  • White pepper 1 tsp
  • Ginger Paste 1 tbsp
  • Poppy seeds 2 tbsp
  • Salt  to taste

Method:

  1. First pour oil add ginger garlic paste and salt make it dry.
  2. Now add add chopped raisins, oil, boiled and chopped almonds and white pepper roast it lightly.
  3. When oil comes up then pour fresh milk and fresh cream roast it lightly then simmer it.
  4. In the end add green chilies serve it with naan.
