Egg Yolk Delight, Honey Mustard Grilled Chicken And Dahi Wali Biryani by Chef Zakir

Ingredients For Dahi Wali Biryani:

  • Chicken  1/2 kg
  • Rice 1/2 kg
  • Yogurt 375 gm
  • Onion 2
  • Tomato 2
  • Ginger garlic paste 2 tbsp
  • Green coriander  1/4 bunch
  • Mint 1/4 bunch
  • Turmeric 1 tsp
  • Red chili powder 1 tsp
  • All spice powder 1 tbsp
  • Cumin powder 1 tsp
  • Kewra  2 tbsp
  • Food color  as required
  • Salt  to taste
  • Clarified butter 1 cup
  • Big cardamom 1 to 2
  • Bay leaves 1 to 2
  • Cloves  2 to 3

Method:

  1. First pour ghee add chopped onions.
  2. Then take out the onions add ginger garlic paste and add chicken cook it till chicken changes its color.
  3. Then cook it on low temperature, yogurt, big cardamom, salt, tomatoes, green coriander, mint, red chilies, garam masala and chopped cumin cook it for 10 minutes.
  4. Then spread the fried onions. now take individual pan, add big cardamom, curry leaves, cloves, salt and rice boil it well.
  5. First for boiling add rice.
  6. Then spread the rice in pan.
  7. Then put rice. add kewra, pinch of food color, simmer it and leave it.
  8. Cover it for 12 to 15 minutes serve the rice.

Ingredients For Honey Mustard Grilled Chicken:

  • Boneless chicken breast 3
  • Mustard paste 3 tbsp
  • Honey 1/4 cup
  • Mayonnaise 2 tbsp
  • HP sauce 1 tbsp
  • Worcester sauce 1 tbsp
  • Crushed black pepper 1 tbsp
  • Garlic paste 1 tbsp
  • Oil 2 tbsp
  • Boiled mash potato 2
  • Fresh cream 4 tbsp
  • Mayonnaise  4 tbsp
  • Chopped green onion 1
  • Boiled green peas  1/2 cup
  • Charcoal as required
  • Salt to taste
  • Black pepper powder  1/4 tsp

Method:

  1. First take a chicken breast press it with chicken breast.
  2. Then take a bowl add mustard paste, honey, hp sauce, wooster sauce, mayonnaise, salt, chopped black pepper, garlic paste and oil mix it well.
  3. Then add marinated chicken.
  4. When it is marinated well then grill the chicken with coal and keep it on a side.
  5. Now take a bowl add mashed potatoes, salt, fresh cream, mayonnaise, green onion, boiled peas and chopped black pepper mix it well.
  6. Now spread the mixture in platter.
  7. Cut the grilled pieces and spread it on mixture.
  8. Now cook the remaining marinated chicken in oil and serve it with chicken.

Ingredients For Egg Yolk Delight:

  • Egg yolk 6
  • Sugar 125 ml
  • Milk 375 ml
  • Fresh cream 1 cup
  • Vanilla essence few drops
  • Cream cheese 1/2 cup
  • Melted cooking chocolate 150 gm
  • Cocoa powder  1 tbsp

Method:

  1. Take a bowl add egg yolk and sugar mix it well.
  2. Then add milk.
  3. When the sugar is dissolved then take a pan cook it on low flame stir it continuously , until the mixture becomes thick.
  4. Then melt the cooking chocolate, cocoa powder and few drops of vanilla essence.
  5. Now remove it from stove stir it continuously make it cool.
  6. When the mixture becomes cool then add cream cheese and fresh cream fill it into small bowls and place it into fridge.
  7. Then serve it with ice cream or fresh cream.
