Sooper Delight, Vegetable Makhni And Chicken Jalfrezi by Chef Zakir

Ingredients For Chicken Jalfrezi:

  • Chicken breast 2
  • Onion chopped 1
  • Capsicum chopped 1
  • Red capsicum chopped 1
  • Tomatoes boiled 3
  • Coriander leaves a little
  • Garlic  2-3 cloves
  • Ginger 1 piece
  • Chili powder 1 tsp
  • Coriander powder 1 tsp
  • Cumin powder 1 tsp
  • Turmeric 1 tsp
  • Cumin seeds 1 tsp
  • All spice powder  1/2 tsp
  • Nutmeg mace powder 1/2 tsp
  • Oil 3-4 tbsp
  • Salt to taste

Method:

  1. First take a chicken breast cut it into cubes and keep it on a side.
  2. Now take a pan pour oil add ginger and garlic make it red.
  3. Then add chopped onions and whole cumin cook it till it becomes soft.
  4. Now add chopped green capsicum and chopped red capsicum cook it for 2 to 3 minutes.
  5. After that take a chicken and boiled and chopped tomatoes roast it on 2 to 3 minutes.
  6. Then take a chopped red chilies, chopped coriander, chopped cumin, chopped turmeric, garam masala, chopped nutmeg mace, salt and chopped green coriander mix it and cover it lightly simmer it on 6 to 8 minutes.
  7. When it becomes dry then pour water. Cover it for 8 to 10 minutes.
  8. Take it out in a dish and serve it zera rice or boiled rice.

Ingredients For Vegetable Makhni:

  • Carrot 1
  • Capsicum 1
  • Potato 1
  • Tomatoes 2
  • Garlic 4 cloves
  • Red beans 1/2 cup
  • Sweet corn  1/2 cup
  • Tomato puree 1/2 cup
  • Fresh cream 1/2 cup
  • All spice powder 1/2 tsp
  • Cumin powder 1/2 tsp
  • Dry fenugreek leaves to taste
  • Chili powder 1 tbsp
  • Salt to taste
  • Oil  3 tbsp

Method:

  1. First take a pan, pour oil add chopped garlic.
  2. When it become red then add chopped tomatoes, cook it for 1 to 2 minutes.
  3. Then add red beans, sweet corn, carrot, capsicum and chopped potato fry it for 1 to 2 minutes.
  4. Then add tomato puree, garam masala, chopped cumin, chopped red chilies, salt and water cover and let it cook.
  5. When the vegetables become soft after 10 to 12 minutes cook and roast it on low temperature.
  6. Along fresh cream and dry fenugreek.
  7. When the gravy becomes thick then take it out and then serve.

Ingredients For Sooper Delight:

  • Sooper biscuit 2 packets
  • Milk 1/2 liter
  • Khoya 250 gm
  • Almond ground 25 gm
  • Pistachios 25 gm
  • Sugar  250 gm
  • Saffron  1 packet
  • Cardamom powder 1/2 tsp
  • Kewra 1 1/2 tbsp
  • Desiccated coconut 4 tbsp

Method:

  1. Spread the biscuit in pyrex dish.
  2. Take a pan pour milk, add khoya, chopped almonds, pistachio, sugar, saffron, chopped cardamom and chopped coconut let it cook.
  3. When the mixture becomes thick then add chopped coconut mix it well.
  4. Then spread this mixture on biscuits, serve it hot or after keeping it in fridge.
