Ingredients For Grilled Chicken Rice:
Boneless chicken 1/2 kg
Ginger garlic paste 2 tsp
Red chili powder 2 tsp
Salt 1/2 tbsp
All spice powder 1 tsp
Lemon juice 3 tbsp
Yogurt 1/2 cup
Oil 4 tbsp
For Rice Making:
Boiled rice 1/2 kg
Curry leaves 10
Yogurt 1/2 cup
Salt 1 tsp
Yellow Food color 1/2 tsp
Cumin seeds 2 tsp
Kewra 1/2 tsp
Green chilies 10
Star anise 6
Green coriander 1 bunch
Oil 1/2 cup
Method:
First cut the chicken boneless into square pieces.
Now add ginger garlic paste, chopped red chilies, salt, garam masala, lemon juice and yogurt then leave it.
Now bake it in oven or grill.
For rice pour oil add cumin.
When it starts to smell then add yogurt, salt, green chilies, star anise flower, green coriander and green leaves.
After that mix the boiled rice.
Now add kewra, grilled chicken and pinch of yellow color.
Pour water and simmer it for 10 minutes.
Ingredients For Baigan Kay Cutlets:
Eggplant 1/2 kg
Soya sauce 2 tbsp
Vinegar 1 tbsp
Chopped garlic 1 tsp
Red chili powder 1/2 tsp
Black pepper 1 tsp
Salt 1/2 tsp
Bread crumbs 1 cup
Egg 1
Fried cumin seeds 1 tsp
Fried round red chili 1 tsp
Chat masala 1 tsp
Oil for frying
Method:
First cut the eggplant into round shape.
Now add soya sauce, chopped garlic, black pepper, salt and chopped red chilies, leave it for an hour.
Now beat it with egg.
Then dip the eggplant into beaten egg. then roll it into bread crumbs.
After that fry the eggplant in hot oil.
Add roasted red chilies, roasted cumin and chaat masala then serve.
