Haleem, Cholay Ka Pulao, Suji Ka Halwa And Falooday Ka Sharbat by Sara Riaz

Haleem

Ingredients:

  • Meat(cow/goat) 1.5 kg.
  • pour wheat into water for 1 hour and 30 minutes.
  • Grams(boil)(blended grams).
  • Paste of ginger and garlic 2 spoon.
  • Red chili powder 1 spoon.
  • Coriander powder 2 spoon.
  • Turmeric powder 1 spoon.
  • Onion slightly chopped.
  • Salt (as per taste).
  • Sweet soda 1/4 tea spoon.
  • Oil or ghee 3.5 cups.
  • Green Coriander 2 (chopped slightly).
  • Mint 2(chopped slightly).
  • Green chili 6(chopped slightly).
  • Ginger slightly chopped 2 spoon.
  • Lemon 6.
  • Spice powder(Garam masala) 1 spoon.
  • white cumin 1 spoon

Method:

  1. Take a bowl add chicken,ghee and spices cook it at low flame.
  2. Boil wheat in water and stir it.
  3. When wheat start boiling add sweet soda in it,When wheat boil properly add into meat.
  4. Cook meat and wheat at low flame when they mix together.
  5. Add meat in grams mix them properly and cook it for a while.
  6. Add green spices,ginger and spices(garam masala) on the top.
  7. Add onion other bowl fry it in oil until brown,when onion become brown remove from heat leave for cool.
  8. Your haleem is ready.
  9. Serve haleem with spices.

Cholay Ka Pulao

Ingredients:

  • Chickpeas 500 grams.
  • Rice 1 kg.
  • Ginger garlic paste 1 spoon.
  • Onion 1.
  • Bay leave 1.
  • Raisins 1/2 cup.
  • Black cumin 1/2 tea spoon.
  • Small cardamom 6.
  • black pepper (whole) 4.
  • salt (as per taste).
  • green chilies(whole) 4.
  • Cinnamon 1 piece.
  • Oil/ghee 1 cup.

Method:

  1. Boil chickpeas add sweet soda in chickpeas because of sweet soda chickpea boil properly.
  2. When they boil properly separate water from chickpeas and wash chickpeas again.
  3. Put ghee or oil in bowl,add onion and fry it until brown,when onion fry proper remove half form the heat and add ginger garlic,spices,green chilies and  small cardamom stir it properly,add chickpeas and raisins.
  4. Add rice and mix rice properly then add five cups water and vinegar.
  5. When rice drain cook it for five minutes.
  6. After that add fried onion over it.

Suji Ka Halwa

Ingredients:

  • Semolina (sooji) 250 grams.
  • Ghee 250 grams.
  • Pistachio 10 pieces.
  • pandanus (little bit).
  • sugar (as per taste).
  • Almond 12 pieces.
  • Cardamom 5.

Method:

  1. pour oil in bowl then add uncover cardamom and heat it
  2. add semolina and stir it by spoon at low flame
  3. Heat the semolina at low flame until it smell
  4. remove from the heat and set aside
  5. Add sugar in other bowl then mix water 750 grams in sugar and heat until sugar dissolve completely and mixture become viscous(caramel)
  6. Add caramel in semolina mix it properly and heat it
  7. Heat mixture at low flame and heat it until viscous and stir it add pandanus
  8. Chopped pistachio and add over it.

Falooda Ka Sharbat

Ingredients:

  • Milk 1 liter.
  • sugar 4 table spoon,
  • Siwayaan (boiled) 1 cup.
  • Almonds table spoon 4.
  • Ice as per requirement.
  • fresh cream for topping.
  • 4 table spoon qarshi/rooh afza.

Method:

  1. Add sugar in milk and heat milk until thickens.
  2. When milk boil properly remove from stove and cool down for few minutes.
  3. Serve into glass.
  4. pour the milk in glass mix 4 tea spoon qarshi or rooh afza,sawaiyaan,almonds and ice
  5. Add cream over the top and serv.e
