Ingredients For Tawa Pulao:
Chicken 1
Rice (soaked) 1 1/2 -2 cup
Onion (chopped) 4
Green chilies 4
Yogurt 1/2 cup
Ginger garlic paste 1 tbsp
Salt to taste
Small cardamom 4
For Stock:
Water 4 cups
Salt to taste
Fennel seeds 1 tsp
Coriander seeds 1 tbsp
Cumin seeds 1 tsp
Big cardamom 2
Black peppercorn 4
Method:
Take a pan add chicken pieces, pour water, salt, fennel seeds, whole coriander, big cardamon and whole black pepper let it cook.
Take out water from rice.
Now add stock, along rice and salt mix it well.
When the water dries then simmer it.
Take a bowl pour oil add boiled chicken, chopped onions, yogurt,
small cardamom and green chilies roast it lightly add ready rice.
After that take a big spoon then mix the chicken and rice.
When it is mixed then add chopped onions on tawa pulao then serve.
Ingredients For Gujrati Karelay:
Bitter gourd 1/2 kg
Tamarind paste 1 cup
Mustard oil 1 cup
Green chilies 4
Mustard seeds few
Curry leaves few
Turmeric 1 tsp
Nigella seeds 1 tsp
Red chilies 1 tbsp
Ginger garlic paste 1 tbsp
Jaggery 2- 2 1/2 tbsp
Salt to taste
To Wash Bitter Gourd:
Turmeric 1 tsp
Salt 1 tbsp
Tamarind paste 2 tbsp
Method:
First Cut the bitter gourd cut it into 4 to 5 pieces.
Now add turmeric, salt and tamarind paste leave it for half an hour.
Then wash it nicely and filter it.
Now take a pan, add soya sauce, fenugreek leaves.
When it starts to smell then add ginger garlic paste, turmeric and red chilies roast it lightly, then turn on the stove.
After that take another frying pan pour soya sauce deep fry it.
When it turns to golden brown then take it out and add ready masala.
Now add jaggary, tamarind paste, green chilies, curry leaves, salt simmer it for 10 minutes.
Then add kalonji turn off the stove.
Tasty gujrati karelay are ready to eat.
Ingredients For Hari Mirch Aur Kaloonji Ka Achar:
Green chilies 250 gm
Chopped garlic 8 cloves
Nigella seeds 1 tsp
Cumin seeds 1 tsp
Turmeric 1 tsp
Lemon juice 3
Salt to taste
Oil 4 tbsp
Method:
First add green chilies, chopped garlic, kalonji, cumin, turmeric, lemon juice and salt mix it well.
Now cover and keep it in fridge for 3 hours.
Take a pan pour oil mix all the ingredients fry it on low temperature.
When it becomes cool then keep it in a washed and dry bottle.
Don't stir it with wet spoon.
