Saag Ghotala, Hara Masala Daal And Dahi Mirch by Chef Gulzar

Ingredients For Saag Ghotala:

  • Spinach 250 gm
  • Purslane 250 gm
  • Fresh fenugreek as required
  • Ginger garlic paste 3 tbsp
  • Onion 1
  • Green chilies 3 to 4
  • Crushed red chili 1 tbsp
  • Turmeric powder 1 tsp
  • Black pepper 1/2 tsp
  • Cumin powder 1/2 tsp
  • All spice powder 1/2 tsp
  • Butter 4 to 5 tbsp
  • Oil 3 to 4 tbsp
  • Salt to taste

Method:

  1. Take a pan add spinach, purslane, fresh fenugreek or dry, ginger garlic paste, green chilies, onion and water cook it so that water dries and spinach tenders.
  2. Now take a pan pour oil and butter put remaining ginger garlic paste for frying.
  3. Then add chopped red chilies, turmeric, chopped black pepper, chopped cumin, chopped garam masala and salt roast it well.
  4. After that add purslane and mix it.
  5. Take it out in dish and then serve.

Ingredients For Hara Masala Daal:

  • Yellow lentil 250 gm
  • Red lentil 250 gm
  • Green coriander 1 bunch
  • Chopped mint 1 bunch
  • Chopped tomato 2-3
  • Green chilies 8-10
  • All spice powder 1 tsp
  • Whole cumin  1 tsp
  • Turmeric powder 1 tsp
  • Black pepper 1 tbsp
  • Ginger garlic 2 tbsp
  • Oil 3 to 4 tbsp
  • Salt to taste

Method:

  1. First add green coriander, salt, chopped mint and green chilies pate.
  2. Now take moong daal and daal masoor wash it nicely.
  3. Then take a pan add chopped turmeric, water and salt tender the lentil.
  4. Then take a pan pour oil add whole cumin, make it crispy.
  5. Then add chopped ginger garlic paste roast it well.
  6. After that add tomatoes roast it.
  7. Now add salt, chopped black pepper, chopped garam masala, chopped turmeric and green masala, roast it well.
  8. When oil starts to comes up then add lentils and cook it for 5 to 10 minutes.
  9. Now take it out in a dish add green coriander for garnish give garlic baghar then serve.

Ingredients For Dahi Mirch:

  • Green chilies 250 gm
  • Yogurt 100 gm
  • Chat masala 4 tbsp
  • Lemon  2
  • Oil for fry
  • Salt  to taste

Method:

  1. Give cut to green chilies.
  2. Now add yogurt, chaat masala, lemon juice and salt make its mixture.
  3. Then fill the chilies with mixture and keep it in sunlight for 4 to 5 days.
  4. Put muslin cloth on its top.
  5. Take a pan pour oil fry the chilies and take it out for serving.
