Chicken Karahi Daal Chana, Moong Daal Kheer And Vegetable Korma by Chef Gulzar

Ingredients For Vegetable Korma:

  • Mix vegetables 1 tsp
  • Ginger garlic paste 1/2 kg
  • Tomato 3 tbsp
  • Brown onion 3
  • Yogurt 2
  • White cumin powder 1 cup
  • Red chili powder 1tsp
  • Whole all spice 1 tbsp
  • All spice powder as required
  • Turmeric powder 1 tsp
  • Crushed black pepper 1/2 tsp
  • Coriander powder 1/2 tsp
  • Green coriander 1/2 cup
  • Oil  1/2 cup
  • Salt to taste

Method:

  1. First add brown onions, pour oil add whole garam masala.
  2. When it becomes crispy, then add onion paste and chopped ginger garlic paste roast it well.
  3. Now add mixed vegetables. Then add yogurt, chopped red chilies, chopped garam masala, chopped turmeric, chopped white cumin, black pepper, chopped coriander and salt cook it well.
  4. Now add tomatoes, mix it cook it well for 5 to 6 minutes.
  5. Then pour water and cook it, so that the korma leaves oil.
  6. Dish out it garnish it with green coriander and remaining brown onions then serve.

Ingredients For Mong Daal Kheer:

  • Yellow lentil 250 gm
  • Milk 1 liter
  • Rice 4 tbsp
  • Khoya 125 gm
  • Kewra essence few drops
  • Cardamom powder 1/2 tsp
  • Sugar 1 cup
  • Clarified butter  4 tbsp
  • Dry fruits for garnish
  • Grated coconut  for garnish

Method:

  1. First wash the yellow lentil and keep it in water.
  2. Then chop it in chopper.
  3. Now take a pan pour milk and sugar cook it on low temperature.
  4. When the milk is boiled then add sugar, yellow lentil and rice, cook it well.
  5. When the mixture becomes thick add khoya mix it.
  6. Now take it out in a dish then add few drops of kewra essence, mix and dish out it.
  7. Garnish it with dry fruits and chopped coconut then serve.

Ingredients For Chicken Karahi Daal Chana:

  • Chicken 1/2 kg
  • Gram lentil 1/2 kg
  • Chopped tomato 3 to 4
  • Ginger garlic chopped 2 tbsp
  • Green chilies 8 to 10
  • Crushed red chilies 1 to 2 tbsp
  • Crushed black pepper 1 tsp
  • Crushed fennel seed 1/2 tsp
  • Crushed cumin 1/2 tsp
  • Caroms 1 pinch
  • Fenugreek  1/2 tsp
  • Clarified butter 1/2 cup
  • Salt to taste
  • Sliced ginger  for garnish

Method:

  1. First take a pan pour ghee add ginger garlic and chicken roast it well.
  2. Then add green chilies mix it well.
  3. Then add tomatoes roast it well.
  4. Now boil boil the chickpea hard, cumin, chopped red chilies, chopped black pepper, chopped nutmeg and Salt mix it well and roast.
  5. Then add green chilies and mustard seeds, mix and cook it well.
  6. When it is tendered then add dry masala take it out in a serving dish, garnish it with ginger then serve.
